Soup and stew, no matter where you’re from, will always be comfort food, especially when there’s a chill in the air. I did not grow up in Ukraine eating any kind of chili, especially white chicken chili.

We warmed up every single day with bowls of borscht and healthy chicken noodle soup.

So, chili, in general, is something I’ve learned to love over the years and healthy white chicken chili is a welcome change to the traditional beef chili that I was first introduced to.

Both are hearty, wholesome, and delicious healthy chili recipes, but the creamy, slightly salty, flavorful white chicken chili is a nice way to switch it up!

Chicken breasts, white beans, corn, onion, lime, garlic, chicken broth, diced green chiles, cumin, oregano, chili powder, cayenne, salt.
  • Chicken: Boneless skinless chicken breasts come with a lot of meat and are easy to shred once cooked and start falling apart.
  • Beans and corn: When cooked, great Northern beans or cannellini beans, are buttery and just melt in your mouth. They add to the creaminess and the juicy corn gives it added texture with a bit of sweetness from the juice. Use frozen corn, quickly cook corn on the cob in Instant Pot or use leftover crock pot corn on the cob.
  • Aromatics: Onion and garlic are needed to impart flavor into the entire dish.
  • Diced green chilies: A can of this will add not only a bit of heat but flavor too!
  • Chicken broth: Look for low sodium broth, if you can. If you’ve got some homemade chicken broth or Instant Pot chicken broth, by all means, use that!
  • Herbs and spices: Ground cumin, dried oregano, chili powder, cayenne pepper, salt, and pepper to taste. You can adjust any of these to your preferences. Fresh cilantro is perfect to add some vibrant herbaceous notes or skip all together.

How to Make White Chicken Chili on the Stove

Here is a quick overview how to make healthy white chicken chili on the stove. Crockpot and Instant Pot versions are down below. Also there is detailed recipe card with all 3 cooking options at the end of this post.

Step by step process how to make healthy white chicken chili on the stove.
  1. Saute veggies with spices: Saute onion and garlic for a few minutes. Then add spices for 30 seconds to allow them to release their flavors. You want to stir at this point constantly to prevent burning.
  2. Mash the beans: Mash about 1 cup of white beans with a fork and a bit of water, if necessary. Beans starch will thicken the chili as it cooks. I find mashing beans before rather than after cooking much easier. Especially, because there is no blender to wash.
  3. Cook the chili: Then add chicken, broth, green chilies, corn and simmer for 20 minutes. The tight lid on a heavy bottom pot or even better option Dutch oven cooks chili fast.
  4. Shred the chicken: You can do it inside the pot with two forks. I like to use meat claws (also great for chicken salad), so I remove chicken and place it on the cutting board and then shred.

  • Combine with seasonings: Return chicken to the pot along with lime juice, cilantro, and yogurt. Make sure the stove is off, so the yogurt doesn’t curdle. Your white chicken chili recipe is ready!

Make It in the Crock Pot

The difference between stovetop and crockpot white bean chicken chili is that you have to saute onion, garlic, and spices in the skillet and then transfer them to the slow cooker. And add only 1 cup broth.

  1. Cook veggies in a skillet: Saute onion, garlic, and spices in the skillet. Transfer to a large slow cooker.
  2. Combine in the slow cooker: Mash 1 cup of beans and add to the slow cooker along with other whole beans, only 1 cup of broth, chicken, and corn.
  3. Cook: Cover and cook on Low heat for 6 hours or on High heat for 3 hours.
  4. Shred meat and season: Shred chicken and return it to the crockpot along with cilantro, lime juice, and yogurt.

Recipe Tip

If you like to use the Keep Warm setting for your chili, I recommend adding the yogurt to individual bowls once served, to prevent it from scorching.

Make It in the Instant Pot

If you know me, you know I am obsessed with Instant Pot recipes. It just makes healthy dinner a reality and so much easier.

I do have an official Instant Pot white chicken chili recipe. However, here is a quick run down:

  1. No need to saute: You don’t have to saute the veggies or spices. Food cooked under pressure comes out more flavorful.
  2. Add and cook: Just throw everything in the Instant Pot in the order listed in the recipe (please note only 1 cup of broth). Pressure Cook on High pressure for 20 minutes.
  3. Quick release, shred, and season: Quick Release the pressure. Shredding the chicken can be done right in the pot because it’s stainless steel. Add cilantro, lime juice, and yogurt.

Recipe Tip

Just like with a slow cooker version, if you like to keep your white chicken chili warm while you wait to serve it, hold off on adding the yogurt until it’s served. That way it won’t curdle in the pot.

Tips for Best Results

  • Chicken broth amount varies: For each different cooking method, pay attention to the amount of liquid used. The Instant Pot and slow cooker only require 1 cup whereas the stovetop requires 3 cups of chicken broth. This is because cooking on the stovetop will allow more of the liquid to evaporate.
  • Make it more creamy: The base is already thick and creamy, and the beans are nice and buttery, but if you like your soup even more blended, pulse it with an immersion blender for a few seconds until desired consistency is reached.
  • Make it thicker: If you find using the Greek yogurt doesn’t give you thick enough results you’re after, you can add a cornstarch slurry to thicken it up a bit.
  • Don’t use non-fat yogurt: 0% or 1% yogurt lacks flavor and body. It tastes quite chalky on its own. This creamy chili recipe relies on the fat in yogurt because all other ingredients do not contain any of it.

Variations

  • Cream cheese: If cream cheese is what you have on hand and you don’t mind using it, make classic white chicken chili with cream cheese instead of Greek yogurt or in addition to it.
  • Using chicken thighs: Instead of chicken breasts, use the same weight of boneless skinless chicken thighs. No changes to the recipe are necessary.
  • Leftover cooked chicken: Use leftover store-bought rotisserie chicken or from another recipe. I use Instant Pot shredded chicken breast, Instant Pot chicken breast or even Instant Pot frozen chicken frequently. Add it in the beginning just like when you would add raw chicken. Super flavorful and even easier!
  • Using fresh corn on the cob: Scrape off the kernels if you’ve got an abundance of corn from the market or garden.
  • No heat: If you want to keep peppers in your soup but none of the kick, swap for sauteed diced bell peppers. Green for savory and red for a sweeter flavor.
  • Other spices: Ground coriander is a nice addition to increasing the flavor profile.

Toppings Ideas

When it comes to chili toppings, it is all about personal taste, heat preference and availability. This healthy white chicken chili is mouthwatering and delicious all on its own but that doesn’t mean you can’t load it up with your favorite toppings:

  • Cilantro: Never too much but I know some people find it soapy. You can also omit it!
  • Yogurt: Or sour cream which is creamier.
  • Tortilla chips. Crunchy, crispy, and slightly salty are great for dipping!
  • Avocado: If you have a ripe one, dice it or slice it and serve on top.
  • Heat: If you can handle the heat, fresh sliced jalapeno with seeds is amazing addition.
  • Cheese: Top with shredded cheese for additional cheesiness. Cheddar, Monterrey Jack, and even Parmesan would work. Or crumbled Cotija cheese is a classic!

How to Store and Reheat

Store: This white chicken chili recipe serves 6 people. It was enough for our family of 4 for dinner and then Alex and I finished it for lunch, so you may not have any leftovers for long. But if you do, refrigerate them in an airtight container for up to 5 days.

Freeze: If you’re serving only 1 or 2 people, make the entire batch of chili and freeze any leftovers. Because there is not much dairy, chili will thaw just fine. Freeze in an airtight container for up to 3 months. You can also make this recipe as a freezer meal, following my freezer meals instructions.

Reheat: Thaw in the fridge overnight and then reheat on low heat on the stove, in the slow cooker, or steam in the Instant Pot for 5 minutes. The nice thing about a pressure cooker is that you can thaw chili from frozen.

FAQs

What can I substitute for green chilies?

Canned diced green chilies are usually not spicy. However, there are mild and spicy versions. My stores carry very mild green chilies and that is what I am using. You can skip them altogether and use more cumin and maybe ground coriander would be nice too. Or add sauteed bell peppers.

Can I use dried beans in this healthy white chicken chili?

Some of our readers have had success using dry beans in the slow cooker by adding an extra 1.5 cup of water at the start to account for the dried beans, which by the time it was ready (4 hours), the chili was nice and thick. Alternatively, you could soak them overnight and cook next day. Here is a full tutorial how to cook dried beans on the stove.

Can I add rotel or diced tomatoes?

The awesome thing about this chili is that it’s completely flexible and customizable to your liking. Adding Rotel or diced tomatoes will increase the acidity and tomato flavor, and change the color of the chili, but it will be great!

Can I make this white chili without chicken?

Yes! Omit the chicken and bam. Also, use vegetable broth instead of chicken broth and if you’d like, you can increase the number of beans used.

Why is white chili white?

Unlike traditional chili, there are no tomato products to turn it red! Instead, we’re using white beans, white yogurt, and in some cases, white cream cheese. So, naturally, this would result in a white stew!

  • Preheat large dutch oven or heavy bottom pot on medium-high heat and swirl oil to coat. Add garlic and onion, sauté for 3 minutes, stirring occasionally. Add cumin, oregano, chili powder, cayenne pepper, salt and pepper and cook for 30 seconds, stirring constantly.
  • In a small bowl, add about 1 cup of beans and mash with a fork. It helps to thicken the chili.
  • Transfer to the pot along with chicken broth, remaining whole beans, corn, green chilies and chicken breasts. Cover, bring to a boil, reduce heat to low-medium and simmer for 20 minutes.
  • Turn off the heat. Remove chicken and shred with 2 forks or meat claws. Return chicken to the pot along with lime juice, cilantro and yogurt.
  • Stir and serve warm with your favorite toppings like tortilla chips, cheese, more cilantro and lime.

Slow Cooker Healthy White Chicken Chili

  • Preheat large ceramic non-stick skillet on medium-high heat and swirl oil to coat. Add garlic and onion, sauté for 3 minutes, stirring occasionally. Add cumin, oregano, chili powder, cayenne pepper, salt and pepper and cook for 30 seconds, stirring constantly. Transfer to a large slow cooker.
  • In a small bowl, add about 1 cup of beans and mash with a fork. Transfer to the slow cooker along with only 1 cup broth, remaining whole beans, corn, green chilies and chicken breasts. Cover and cook on Low for 6 hours or on High for 3 hours.
  • After follow the steps like in the stovetop version above.

Instant Pot Healthy White Chicken Chili

  • In a small bowl, add about 1 cup of beans and mash with a fork.
  • To 6 or 8 quart Instant Pot, add ingredients in the following order: garlic, onion, corn, whole and mashed beans, chicken breasts, green chiles, cumin, oregano, chili powder, cayenne pepper, salt, pepper and only 1 cup broth. Do not stir.
  • Close the lid, set pressure vent to Sealing and Pressure Cook on High or Manual for 20 minutes. Release pressure using Quick Release method by turning pressure valve to Venting position immediately after cooking.
  • Open the lid, remove chicken and shred with 2 forks or meat claws. After follow the steps like in the stovetop version above.

Crustless Broccoli Quiche is a lightened up version of traditional quiche without the pie crust, fuss and extra calories. It tastes amazing freshly baked or cold, for breakfast, snack or even dinner!

Our family absolutely loves crustless quiches like crustless spinach quiche, crustless zucchini quiche and cottage cheese zucchini quiche!

Crustless Broccoli Quiche

This week I made crustless broccoli quiche and it disappeared during breakfast and snack time! It is fiber and protein loaded, is easy to make and a sure way to get more veggies into your kids.

This broccoli quiche with no crust packs insane amount equal to 4 cups of broccoli. Just like spaghetti squash quiche and crustless zucchini pie, it’s a great way to hide veggies from kids.

Red onion and garlic add flavor without sauteing and disappear in a fluffy egg mixture. Salty feta cheese melts inside and a few handfuls of cheddar add that irresistible golden crust on top. So good!

Ingredients for Crustless Broccoli Quiche

Eggs, feta, cheddar, milk, red onion, broccoli and garlic.
  • Eggs: 7 large or I used 9 medium eggs. You can also use egg whites with replacement ratio of 1 large egg = 1/4 cup egg whites.
  • Broccoli: 1 pound or 4 cups of fresh or frozen broccoli works. If using frozen veggie, run it in a colander under hot water and drain well. I finely chop even the stalk, especially if it’s organic, and use in dishes like healthy broccoli salad or healthy beef and broccoli.
  • Milk: Quiche without milk is not a quiche but rather a frittata. Creamier milk, more flavor dense is the quiche. You can use non-dairy milk, just be ready for more thin flavor.
  • Cheese: Feta cheese because it tastes amazing combined with fresh herbs and garlic. And a sprinkle of cheddar on top adds nice golden crust, but is OK to skip or sub with any other hard melting cheese.
  • Onion and garlic: Red onion is perfect for quiche because it adds mild flavor without sauteing. Regular yellow onion needs sauteing and you can do that, throw garlic in there too.

How to Make Crustless Broccoli Quiche

  • Prep veggies and cheese: I like to chop all veggies before I do anything else. And I start preheating oven at same time. Chop broccoli into bite size pieces as well as stalks, everything will get cooked and soft. Crumble and grate cheeses now too. chopped broccoli, red onion and crumbled feta with egg mixture in a glass bowl
  • Whisk egg mixture: No need to whisk eggs first. Whisk eggs, milk, salt, pepper and red pepper flakes together.
  • Add veggies and cheese: Then combine chopped broccoli, onion, garlic with liquid egg mixture and crumbled feta. Once in a pie dish, level with spatula and then sprinkle with cheddar cheese. Crustless Broccoli Quiche assembled and ready to bake in a pie dish
  • Bake until golden in preheated 375 degrees F oven for about 50 minutes. Shake the pie plate and if middle is not jiggly, quiche is ready and set. Cool for 10 minutes and slice. Yum!

Crustless quiche is high in protein, fiber and healthy fats. So it’s a low carb meal on its own. Below are a few great pairings if you need more:

How to Store and Reheat

Serve quiche warm or cold. Are you like me and one of those people that thinks quiche tastes even better cold?! I recommend to slice it into 8 slices after baking, cover and refrigerate in same baking dish up to 5 days. Makes it such an easy grab and go meal!

Freeze quiche in airtight container for up to 3 months. I absolutely love these reusable 1 gallon silicone bags. Thaw in the fridge overnight.

Reheat quiche in a microwave or in the oven at 375 degrees F which would take about 15-20 minutes.

FAQs

Can I make it ahead of time?

Yes. Make ahead by assembling quiche completely and refrigerate until ready to bake. Since there is no raw meat involved, quiche can wait for you for up to 2 days. Speaking of make ahead Easter, Mother’s Day or Holidays dish. Don’t forget to warm up dish on a counter for about 30 minutes before baking, otherwise it might crack.

  • In a large bowl, add eggs, milk, salt, pepper, red pepper flakes and whisk well. Add broccoli, red onion, garlic, feta cheese and stir well with spatula.
  • Transfer mixture to previously prepared baking dish, level with spatula and sprinkle with cheddar cheese. Bake for 50 minutes or until the middle isn't jiggly anymore.
  • Remove from the oven and let quiche cool for 10 minutes.

  • Store: Refrigerate leftovers in airtight container for up to 5 days. Reheat (if you have to because it taste absolutely amazing cold) in a microwave. Or in the oven at 375 degrees F for 15-20 minutes.

Ingredients for Air Fryer Chicken Breast

One of the best things about this air fryer recipe is that it is so simple and made up of entirely clean ingredients and pantry staples. You only need 6 basic ingredients!

Chicken breasts, oregano, paprika, onion powder, garlic powder, salt, pepper and oil.
  • Boneless skinless chicken breasts: I use 8 – 9 ounces and around 2-inches thickness breasts. If your chicken breasts are larger or smaller, you may need to adjust the cook time. Please see below.
  • Oil of choice: I use avocado oil or olive oil.
  • Seasonings: A simple combination of onion powder, garlic powder, dried oregano, and smoked paprika. And salt and pepper.

Recipe Tip

Want a different spice blend? You can swap out the seasonings I’ve suggested with Italian seasoning, cajun spice, all purpose spice or taco seasoning. For heat, add a little cayenne pepper or chili powder to the dry rub.

How to Cook Chicken Breast in Air Fryer

Here is a quick overview how to make air fryer chicken breasts. There is full recipe card below.

  • Preheat the air fryer and prep chicken: Preheat it to 380 degrees F for 5 minutes. Add chicken breasts to a bowl and drizzle with oil. Then rub using your hands or toss with tongs to coat.
  • Rub chicken with seasonings: Add the spice blend, salt and pepper, and then rub chicken breasts to make sure all sides of the chicken are evenly coated.
  • Air fry chicken breast: Spray the basket of air fryer with cooking spray, place chicken breasts in air fryer in a single layer and cook chicken for 16 minutes. No need to flip chicken breasts or shake the basket. 
  • Check the temperature: Open and insert meat thermometer into the thickest part of the chicken breasts to make sure it has reached at least 150 degrees F.

How Long to Cook Chicken Breast in Air Fryer?

Air frying time depends on the size of your chicken breasts. For average-sized chicken breast that’s around 2-inches thick, I recommend between 16-18 minutes, or until a meat thermometer inserted into the chicken breast reaches 150 degrees F.

As per food safety website, to be safe to eat, chicken must reach an internal temperature of 165 degrees F. However, there’s no need to cook chicken breasts in air fryer until that point. Cook until it’s 150 degrees F and let it rest covered. The residual heat will continue to increase the internal temperature while the chicken rests.

This way, you get to avoid dry, overcooked chicken. It is my secret to juicy and not dry air fryer chicken breasts!

  • No need to brine: Dry rub and optimal cooking temperature and method, will take care of juicy chicken breasts.
  • Size matters: I recommend to pick the same size chicken breasts for even cooking when shopping. Also know the weight of each piece to select correct cooking time.
  • Cook in a single layer: The hot air needs to circulate the chicken to get the job done. Overlapping or stacking chicken breasts in air fryer is not recommended.
  • There’s no need to shake the basket: While flipping chicken can help to yield crispier results, this dry rub chicken breast isn’t intended to be super crispy. So leaving it alone will help avoid dry chicken. 
  • Allow it to rest: Once cooked, transfer the air fried chicken breast to a large foil covered platter and allow it to rest for 5 minutes to allow the juices to settle and redistribute.

  • Sauces: Try it with Thai chili sauce or healthy BBQ sauce.
  • Fresh garlic: If you have a little extra time, feel free to use fresh grated or minced garlic over the chicken breasts like I do in air fryer lamb chops.
  • Add vegetables: If you have enough space in the basket, you can add some veggies directly in with the chicken breasts to cook simultaneously. You could include zucchini, brussel sprouts, red peppers, broccoli and asparagus. 
  • For even juicier results: You can marinate the chicken breasts using one of these 5 chicken marinades. When marinated, place the chicken breasts straight into the air fryer basket and cook. There’ll be a little more “cleanup” afterward of the basket but otherwise it couldn’t be more simple.

How to Store and Reheat

Store: Refrigerate leftovers in an airtight container for up to 1 week. Make sure to move it to the refrigerator within 2 hours for food safety and keep it whole for the juiciest results.

Freeze: Cool completely before transferring the chicken breasts to a freezer-safe container and freeze for up to 3 months. I recommend slicing or shredding the chicken breasts before freezing. That way, it’ll thaw faster and can be added to meals immediately.

You can thaw them overnight in the refrigerator before eating or reheating.

Or reheat air fryer chicken breast in a lidded pot with a splash of water or broth to steam them until warm. This will keep the chicken tender and moist compared to trying to reheat them in the oven.

FAQs

What type of air fryer can I use?

There is a basket style air fryer, toaster oven air fryer and a lid attachment for an Instant Pot. They all work great and choice will depend on personal preference.

I use a large 5.8 quart Cosori air fryer. I cook for 4 people. I say the biggest concern I hear is that air fryer is too small. The attachment lid or small basket would fit maximum 2 chicken breasts in air fryer and you would have to air fry chicken in batches. You can always pop it back in for a minute to reheat the first batch.

Also when air frying food, it needs some space in between to ensure roasted results we all crave from the air fryer.

Do I have to brine the chicken breasts?

No, there is no need to use the brine when you air fry chicken breast. I can guarantee you will have juicy results and save a lot of time with this recipe!

Do you have to flip chicken breasts in air fryer?

No, there is no need to flip chicken breasts in air fryer. Thanks to the design of air fryer, hot air circulates on top and on the bottom of food, cooking it evenly.

What if chicken breast came out undercooked?

After resting the chicken and checking with the instant read thermometer, if you see temperature is below 150 degrees F, cook the chicken for extra 2 minutes. It sure is a delicate balance and figuring out the cooking time based on size, your air fryer and personal preferences. It is a matter of practice.

Can I make it ahead?

Yes. After rubbing the chicken breasts with spices, you can allow them to sit covered in the refrigerator overnight for up to 12 hours before cooking.

I finally perfected an ultimate healthy breakfast sandwich! Hearty veggies, fluffy eggs and a bit of melted cheese wrapped in a thin crispy whole wheat bun.

It’s like grab-and-go healthy breakfast casserole or cottage cheese egg bake but in a convenient sandwich form!

If healthy breakfast does not happen at your house unless you meal prep, put sausage pancake muffins, cottage cheese egg bites and Instant Pot egg bites on your must make list!

Ingredients for Healthy Breakfast Sandwiches

Chicken sausage, eggs, cheese, onion, bell pepper, whole wheat thins, kale.
  • Bread: I used whole grain burger thins. You can use whole wheat English muffins, bagel thins, Greek yogurt bagels, cottage cheese bagels or even gluten free buns.
  • Vegetables: Onion, bell pepper and kale. You can use any other firm veggies like Swiss chard, spinach, zucchini, broccoli and mushrooms.
  • Sausage: We like chicken sausage but you can use turkey sausage, baked bacon, or any other breakfast protein of choice. Use turkey, natural or organic etc. It’s just better than any processed sausage patty at a fast food joint.
  • Cheese: I added about 1/2 slice of smoked gouda cheese per each sandwich. Feel free to swap for cheddar, Swiss or any other melting cheese your budget allows besides processed cheese.
  • Eggs: A dozen.

How to Make a Breakfast Sandwich

  • Saute vegetables: First saute the onion to let it brown a bit, then add bell pepper and kale. Cooking veggies in a heart healthy avocado, olive or coconut oil ensures nice char and flavor.
  • Make egg mixture: Whisk the eggs with milk or water. Add baking powder to help eggs rise, and a touch of salt and pepper for flavors to shine.
  • Bake: Spray about 16 x 11 half sheet liberally including sides with cooking spray. Pour egg mixture mixed with veggies and sausage and move them around for even distribution. Bake at 375 degrees F for 25 minutes.
  • Cut into 12 squares: Loosen around the edges. I find it best to use a flat spatula to cut the eggs. It slides underneath them better and you are able to get the egg square removed without leaving bits and pieces behind! Slide spatula under each piece with a “scraping” motion from the bottom.
  • Prep: Tear 12 pieces of unbleached parchment paper 1 inch wider than a bun. Tear 12 pieces of aluminum foil 2 times wider than a bun. I do not like cooking food in aluminum foil due to harmful chemicals leaching into food during the heating process. If you are OK with that, you can skip parchment paper.
  • Assemble: Open the bun, place egg on the bottom part, top with cheese and close with the top part of the bun.
  • Wrap tightly: First in parchment paper, and then in aluminum foil.

How to Store

  • Cool: Before storing, let sandwiches cool. Trust me, you do not want to stuff hot sandwiches in a plastic bag.
  • Keep a few in the fridge: If you want to keep a few freshly made sandwiches in the fridge for the week, no problem. Refrigerate wrapped healthy breakfast sandwiches for up to 5 days.
  • Freeze: Breakfast sandwiches are really meant for freezing. Freeze in a resealable gallon size bag for up to 3 months. Frozen breakfast sandwiches keep so well!
  • Thaw overnight: Works best if you know you will be in a hurry or are worried about ingredients drying out when heating up. 

Storing Tip

Date the breakfast sandwich storage bag! This ensures they get eaten in a timely manner before going bad, as well as it will save you from trying to figure out what is in the freezer mystery bag!

How to Reheat

Reheat from frozen any way you like! I throw one in the oven before jumping into a shower.

  • Oven (crispy): Open sandwiches and bake at 425 degrees, fresh for 10 minutes and from frozen for 15-20 minutes.
  • Panini press: Place wrapped sandwich onto preheated panini press (indoor grill) and grill 10 minutes for fresh and 15 minutes for frozen.
  • Microwave: Microwave without foil, wrap in a paper towel to prevent from drying out. All ovens vary, so you will have to experiment.
  • Toaster oven (crispy): Reheat uncovered in a toaster oven – again you know yours best.

Reheating Tip

Major tip! Reheating breakfast sandwiches from the freezer unwrapped makes them more crispy. If closed, moisture has no way to escape.

Tips for Best Results

  • Chop veggies small: They will cook faster and will be less noticeable in the eggs since the egg patty isn’t overly thick.
  • Don’t over bake eggs: Your eggs are done cooking either when a knife inserted in center comes out clean or a thermometer inserted into center reaches 160 degrees F.
  • About the egg shape: I tried to use a metal round jar lid to create rounds. That creates a lot of extra work and waste. Instead, cutting eggs into 12 squares takes minutes. And if you choose larger thin buns or bagels the shape is barely noticeable.

  • Using egg whites: Replace as many of the eggs with egg whites using this ratio – 1 large egg equals 3 tablespoons of liquid egg whites.
  • Low carb: Use your favorite keto buns or almond flour Greek yogurt bagels.
  • Skip cheese slices: Add parmesan cheese or feta cheese into the egg mixture.
  • Spices: Add hot sauce, red pepper flakes, everything bagel seasoning or ground mustard into the egg mixture.

  • To saute veggies: Preheat large ceramic non-stick skillet on medium heat and swirl oil to coat. Add onion and saute for 3 minutes, stirring occasionally. Add bell pepper and saute for 3 more minutes. Add kale, a pinch of salt and pepper; saute for another minute, stirring a few times.
  • To cook eggs: Preheat oven to 375 degrees F and spray bottom and sides of large 16 x 11 baking sheet liberally with cooking spray. In a large bowl, add eggs, milk, baking powder, a pinch of salt and pepper; and whisk well. Add cooked veggies and sausage; and stir well.

  • To assemble sandwiches: Tear 12 pieces of unbleached parchment paper 1 inch wider than a bun. Tear 12 pieces of aluminum foil 2 times wider than a bun.
  • Open the bun and place egg on the bottom part, topping with cheese and closing with the top bun. Wrap in parchment and then in aluminum foil tightly.

  • Preheat oven to 350 degrees F. In a medium bowl, add chicken tenders, drizzle with olive oil and toss to coat.
  • In a small bowl, add garlic powder, onion powder, smoked paprika, oregano, salt and pepper. Whisk, sprinkle over chicken and toss to coat evenly.
  • Arrange on a baking sheet in a single layer with chicken tenders not touching each other. Bake for 20 minutes or until instant read thermometer inserted in the thickest part reads 165 degrees F.

Ingredients for Chicken Mushroom Recipe

The list might seem long but trust me, most of them are pantry staples, and then just chicken and few veggies and herbs. So easy!

Chicken breasts, brown mushrooms, onion, garlic, parsley, olive oil, butter, oregano, smoked paprika, salt and pepper.
  • Fresh chicken breasts: Boneless skinless chicken breasts or chicken thighs. I cut them up into 2 inch pieces, so chicken cooks quickly and evenly.
  • Fresh mushrooms: Brown mushrooms or also known as cremini mushrooms or baby bellas are the most flavorful mushrooms. White mushrooms will work if that’s all you have on hand.
  • Onion and garlic: Yellow onion or white onion. I use grated garlic clove added at the end for the maximum flavor.
  • Olive oil and butter: Oil is used for sauteing chicken. Any mild oil like avocado oil or grapeseed oil works. Onion and mushrooms sauteed in butter come out extra flavorful, don’t skip.
  • Seasonings: Dried oregano, smoked paprika, salt and pepper. Honestly use what you have on hand. Italian seasoning would be great too!
  • Fresh herbs: I like the taste of Italian parsley added to chicken with mushrooms. Fresh dill, fresh basil or green onion will pair nicely as well.

How to Make Chicken and Mushrooms

This high protein recipe comes together in 4 simple steps, with 10 minutes of prep and in one skillet. This is just a quick overview but there is full recipe card below.

I like to use a cast iron skillet because it gets really hot and sears chicken and vegetables very well but you can use any large skillet.

Step by step process how to saute chicken with mushrooms.
  • Sear the chicken: Cook chicken breasts with smoked paprika, oregano, salt and pepper in a bit of olive oil for about 10 minutes. The secret is let chicken get a nice char on each side and not to stir often. Transfer it onto a large plate.
  • Saute mushrooms and onions: Saute onions and mushroom with a bit of butter, for about 5-7 minutes. You want the onions to be nice and soft and mushrooms fragrant and beautifully colored. Thanks, butter!
  • Add garlic: With heat off add a few cloves of freshly grated garlic. It will elevate the flavor of entire chicken mushroom dish immensely!

  • Final seasoning: Add back previously cooked chicken and fresh parsley. Give skillet a stir and now it’s time to adjust any seasonings like salt and pepper. I like to underseason before and do final check at the end when all flavors are mixed together. Garnish with more parsley and that’s it!

Tips for Best Results

  • Use cast iron skillet: Cast iron skillet gets very hot, sears chicken and veggies nicely, and makes cooking quick as it actually retains the heat. Of course, other type of frying pan will work but the cook time might be longer.
  • Cook chicken and mushrooms undisturbed: Refrain from stirring everything too often, it is not a stir fry. Once chicken hits the hot surface of the skillet, let it get nice char and sear. That’s the base for lots of flavor in this recipe.
  • Use both oil and butter: While it is healthy and lovely to sear juicy chicken breasts in olive oil, it is equally extra flavorful to cook mushrooms and onion in butter. Don’t skip butter!
  • Chicken thighs: You can use boneless skinless chicken thighs cut into 2 inch pieces and cooking time will remain the same.

Serving Ideas

Truly what you have here is a very flavorful low carb main dish, so I recommend to pair it with a more simple side dish.

For lighter meal I recommend to serve this chicken and mushroom recipe with any simple green salad like lettuce salad, romaine lettuce salad or butter lettuce salad. For a heartier salad, pick this Mediterranean chickpea salad. I know it is far from “plain” but it will go well with this dish.

For those who are more hungry, serve over a bed of mashed potatoes or with roasted butternut squash.

What is the best way to clean mushrooms?

I find the best way to clean mushrooms is to place them in a large bowl with cold water and let sit for 2-3 minutes to allow the dirt to loosen. After scrub and rinse under cold water. Such short soak time doesn’t make mushrooms absorb the water.

Can I use different vegetable instead of mushrooms?

Yes. If you don’t like mushrooms or have allergies, chopped zucchini, bell pepper, asparagus or green beans will pair nicely with garlic butter sauce and onion.

How can I make this dish more flavorful?

Add a splash of white wine, soy sauce or Worcestershire sauce to onion and mushroom mixture at the end.

Can I make it ahead of time?

Yes. Store cubed raw chicken in one airtight container and chopped onion and mushrooms in another one in your refrigerator for up to 2-3 days. When ready to cook, all you have to do is combine everything and saute. Will take only 15 minutes.

Making a big pot of one of my Instant Pot soup recipes like this Instant Pot chicken tortilla soup comes in handy when I’m feeding my hungry husband and 2 hockey playing boys.

If you don’t have the Instant Pot, you can make this healthy chicken tortilla soup on the stovetop or in a crockpot instead. As the flavors settle overnight in the fridge, enjoy it even more the next day for a quick lunch or easy dinner!

Ingredients for Instant Pot Chicken Tortilla Soup

Chicken breasts, corn tortillas, tomato sauce, corn, oil, black beans, chili powder, cumin, chipotle in adobo, salt, onion, garlic, lime, avocado, cilantro.
  • Chicken: Boneless skinless chicken breasts, chicken thighs, or any part of chicken works. Either way, the recipe stays the same!
  • Black beans: I use Instant Pot black beans that have been batch cooked or sometimes I cook dried beans on the stove. You can also use Instant Pot kidney beans or pinto beans. Canned beans work as well, just be sure to buy low sodium or no salt added beans.
  • Corn: I use frozen corn and no need to thaw it. Canned corn that has been drained works too.
  • Tomato sauce: You can also use passata or crushed tomatoes. It is the same tomato sauce with a different name based on your location. Or pulse diced tomatoes in a blender.
  • Chicken broth: Here is how to make chicken broth or Instant Pot chicken broth recipe. If you don’t have broth on hand, just use water and add more spices to taste. I have done this many times.
  • Chipotle in adobo sauce: Look for it in small cans in the International food section. Replace with smoked paprika or extra chili powder to taste.
  • Cumin and chili powder: A traditional combination of spices in Mexican cuisine.
  • Tortillas: I recommend using corn tortillas rather than flour tortillas for the best texture. You can also use corn tortilla chips to thicken the soup and for serving.

How to Make Chicken Tortilla Soup in Instant Pot

Step by step process how to make chicken tortilla soup in Instant Pot.
  • Saute the garlic and combine ingredients: Saute garlic in oil right in the Instant Pot. Add half of the tortilla strips, chicken, corn, black beans, chipotle in adobo, cumin, chili powder, chicken broth, tomato sauce, salt, and pepper. Don’t stir.
  • Cook the soup: On the Instant Pot Duo, press Pressure Cook and select High pressure, and on Instant Pot Lux press Manual button for 20 minutes.
  • Saute the other half of tortilla strips: I find the pan on the stovetop yields crispier tortilla strips that don’t break. This is for garnish. You can add a bit of crushed garlic as well.
  • Shred the chicken: After soup is done cooking, do the Quick release (after 5 minutes) or Natural release to release remaining pressure. Open the lid and shred chicken with 2 forks right in the pot. Stir to combine and we are ready to top off the soup with our favorite garnishes.

Tips for Best Results

  • Don’t stir soup before cooking: It’s better not to stir because sugars in tomatoes may start caramelizing at the bottom and cause the “Burn” message. If you stirred by accident, let it be and hopefully your pressure cooker will come to pressure.
  • If you want to do a quick release: I recommend waiting 5 minutes before doing so to avoid very aggressive steam and possible splatters. Also using a steam diverter helps a lot!
  • For 3 quart Instant Pot: Half the ingredients but keep the same pressure cooking time.
  • To use frozen chicken: You can use any frozen chicken pieces, just make sure they are separated. Cooking time will be the same but your Instant Pot will take a few extra minutes to come to pressure.
  • Toss in a few more veggies such as diced carrots and celery.

Toppings Ideas

  • Tortilla strips: Fry the other half in a separate ceramic non-stick skillet while your Instant Pot chicken tortilla soup is cooking. Crispy tortilla strips add such a fun contrasting texture!
  • Or simply use tortilla chips: Scooping up some soup on a crunchy chip is also a bonus!
  • Lime: A squirt or drizzle of lime adds a vibrant citrus finish that is amazing.
  • Cilantro: Or parsley, or green onions.
  • Red onion: Sweeter than white onion, and very popular in Mexican-inspired cuisine. It’s not too pungent but adds great taste and a slightly crispy component.
  • Avocado: Sliced or diced avocado on top adds a creaminess without adding any dairy.
  • Sour cream, Greek yogurt, and freshly shredded cheese: If you’re not concerned about keeping it dairy-free, add some of this good stuff.

Freeze: This chicken tortilla soup is freezer-friendly because there are no tender vegetables. Freeze cooked and cooled down soup leftovers in an airtight container or resealable silicone bags leaving room for expansion for up to 3 months. Thaw in the fridge overnight or on the counter for 6 hours.

Reheat: Reheat the amount of soup you will consume at that time by simmering on low heat in a pot. Shouldn’t take more than 5-7 minutes. For quick thawing, place frozen soup into a pot and simmer on low, covered, and stir occasionally.

FAQs

Can I double the recipe?

If you have 8 quart Instant Pot, you can double all ingredients but keep the same cook time. 6 quart pressure cooker is too small for the doubled recipe.

Will this recipe work in a slow cooker?

Yes. Cook garlic and tortillas in a skillet. Then add half of tortillas to a large slow cooker with remaining ingredients. Cook on Low for 8 hours or on High for 4 hours.

Can I make vegetarian tortilla soup?

Yes. Omit the chicken and add chickpeas or double the amount of beans used. Swap the chicken broth for vegetable broth too.

Can I use rotisserie chicken?

Yes, you can add about 3 cups of shredded chicken and pressure cook for 10 minutes instead of 20 minutes. Leftover cooked chicken like Instant Pot whole chicken and Instant Pot frozen chicken or a store-bought rotisserie chicken are great.

  • You can use frozen chicken: Cooking time will not change. Your Instant Pot will take a few minutes longer to come to pressure. If using a couple of chicken breasts, make sure they are separated.

It took me a few years to come up with a healthy tuna salad recipe I like. I am more of a canned salmon salad girl but my kids love tuna, so I kept trying.

I tried all healthy versions of tuna salad. Tuna salad with avocado is delicious but it lacks the familiar creamy texture. And using only Greek yogurt without any mayonnaise yields a tart salad.

I already struggle with the whole concept of “tasty classic tuna salad”. So, it took a few tries to come up with what I consider a tuna salad that is a lighter option yet tastes super creamy!

I am finally happy to share the best healthy tuna salad I can eat too! There just has to be a touch of mayo for me, personally. You can omit it though, it is a very small amount!

Ingredients for Healthy Tuna Salad

Here are 10 simple ingredients necessary to make this low calorie tuna salad.

Canned tuna, yogurt, mayo, celery, red onion, pickles, garlic, vinegar, salt and pepper.
  • Canned tuna: You will need 4 cans of tuna, regular size of 4 ounces each. Please see below on more info which canned tuna is best to use for this salad.
  • Mayonnaise: I like to use mayo made with avocado oil. You can use your favorite or omit it completely.
  • Greek yogurt: Use Greek yogurt with at least 2% fat for the creamiest results. 0% yogurt will not taste good in this particular salad recipe.
  • Dill pickles: Add a briny taste with sweet and sour notes.
  • Celery and red onion: Crunchy celery and zesty red onion add both crunch with bold earthy and sweet taste.
  • Fresh garlic: Because garlic is always a must in any dish, hands down.
  • Lemon juice: Adds tang and brightness.

How to Make Healthy Tuna Salad

This tuna salad recipe takes only 15 minutes of prep. Simply mix the ingredients, then place in the refrigerator to chill.

  • Drain a can of tuna: Holding onto the lid of open can, flip the can and drain into the sink while pressing hard on the lid.
  • Flake the tuna: Using a fork, remove tuna from a can into a mixing bowl and flake with a fork. You can also add all 4 cans into a large bowl and flake with a hand mixer.
  • Combine all ingredients: Add pickles, celery, red onion, garlic, lemon juice, salt, pepper, yogurt and mayo to your bowl with tuna.
  • Stir well with a fork and refrigerate. 30 minutes would be enough but longer is better.

What Is the Best Canned Tuna to Use?

There are many types of canned tuna on grocery shelves but it mostly comes down to the type of fish and your budget.

  • Albacore tuna: White tuna has less “fishy” taste, white color and a firm texture. According to US FDA, it is higher in mercury than other tuna species because it eats more fish that might contain mercury.
  • Light tuna: Is a mix of smaller tuna species like yellowfin tuna, skipjack tuna and yellowtail tuna. It is tan to pink in color, has softer texture, more flavor but also more strong fish taste. It has lower mercury levels than albacore.

I always buy chunky light tuna packed in water because it is the most affordable. When I want a bit of a different texture, I splurge on albacore tuna.

Variations

I am sharing just a basic recipe for a tuna salad. You can jazz it up to satisfy your taste buds.

Here are a few variations I tried or think would be good:

  • Curried salad: Add desired amount of fresh curry powder. I used the same yellow curry powder I make yellow chicken curry with and salad turns out so flavorful!
  • Pasta salad: Mix with cooked whole wheat macaroni for healthy tuna pasta salad.
  • Avocado and eggs: Love avocado? Substitute mayo with mashed avocado. Add a few chopped hard boiled eggs. This is when I would add a squirt of Dijon mustard too.
  • Fresh herbs: You can always add 2-3 tablespoons of finely chopped fresh dill, parsley or green onion. I like to keep salad basic for you, so you can make it anytime, but I add herbs if I have them on hand.

  • Drain cans with tuna well. I usually press hard onto the lid while draining the can completely.
  • Transfer to a large bowl and separate into flakes with a fork.
  • Add pickles, celery, red onion, garlic, lemon juice, salt, pepper, yogurt and mayo.
  • Stir well with a fork and refrigerate.
  • Serve cold in a sandwich or over lettuce leaves.

  • What canned tuna to buy? I buy canned light tuna packed in water. Albacore tuna has less “fishy” taste and white “meaty” texture or yellowfin/skipjack/light tuna is tan to pink in colour and has more strong fish taste. I always buy chunky one vs. whole because it’s cheaper.
  • Mayo + plain Greek yogurt:  I used mayo made with avocado oil and Greek yogurt with at least 2% fat for the tastiest results. You can omit mayonnaise though.
