I used zest of my lime as well as lime juice, as I didn’t have Kaffir lime leaves. You can omit chicken and use flavorful vegetable broth. Also can add chickpeas or white beans. Enjoy!

I omitted the maple syrup because I’ve never seen that in a Thai recipe before and it was still incredibly sweet. After cooking, I added more salt and pepper to give it flavour since I found it sweet, but bland.

I added chili garlic paste and it gave the flavour and heat that it was missing.

Wow, this soup is amazing. I didn’t have any chicken breasts so I was going to add some chopped leftover roast turkey. I tasted the soup plain first and then with each topping addition. It went from amazing to super amazing. I agree with your husband, this is restaurant quality soup. (Also really good with rice as recommended by Steph of MI)

It is red curry paste, sorry about the confusion. You can always add chili paste at the end. Spice kick is a very personal preference, that’s why there is mild, medium and hot variations of many dishes. For more spice kick add more red curry paste to taste and it will do the job. Enjoy!

It needed more of a spicy kick. I love the addition of lime, peanut and cilantro. Definitely adds to the flavour, but it’s missing spice. Red curry paste is in the list of ingredients, yet in the Instructions section, you mention red chili paste. I used the red curry paste. Which one is it? And can I add some chili paste now that it is already cooked?
