When it comes to cooking a whole chicken, I usually stick to cooking whole chicken in Instant Pot or slow cooker whole chicken. And when I’m truly in a pinch, I make Instant Pot frozen whole chicken. All are easy and hands off recipes!

But now that I’ve tried this spatchcock chicken recipe and even turned it into a one pan dinner, it’s become my go to recipe for roasting a whole chicken in the oven!

Ingredients for Spatchcock Chicken

For this chicken recipe, all you need is a whole chicken, veggies, and a few simple seasonings.

Whole chicken, potatoes, carrots, garlic, dried parsley, smoked paprika, olive oil, salt, pepper.
  • Whole chicken: My chicken was between 4-5 pounds, but you can use any whole chicken from 3-6 pounds. Just be sure to trim any excess fat.
  • Vegetables: Potatoes and carrots cut into large chunks. See FAQs for other suggestions.
  • Olive oil: I love using extra virgin olive oil because it adds a rich flavor and helps get that perfectly crispy, golden skin. You can also use avocado oil.
  • Garlic: Freshly grated garlic cloves have the best flavor and spread more evenly.
  • Seasoning: Dried parsley, smoked paprika, salt, and pepper.

How to Spatchcock Chicken

Here’s an overview of how to flatten the chicken and roast it in the oven with your veggies.

Step by step process how to spatchcock chicken and bake it with vegetables.

Start by preheating your oven to 450 F.

  • Prepare the chicken: Place the chicken breast-side down on a cutting board and use kitchen shears to cut along both sides of the spine, cutting through the ribs. Flip it over, press down on the breastbone until it cracks and the chicken is flat. Then, transfer it to a baking sheet.
  • Season the chicken: In a small bowl, whisk together dried parsley, smoked paprika, salt, and pepper. Drizzle both sides of the chicken with olive oil and rub it in. Then, rub with garlic and sprinkle with spice mix on both sides. Center the chicken, breast side up, in the on the baking sheet.
  • Add the veggies: Place the potatoes and carrots around the chicken. Drizzle with olive oil, sprinkle with salt and pepper, then toss to coat everything evenly. Arrange the veggies in a single layer.
  • Bake the chicken: Bake for 15 minutes, then lower the heat to 425 F and bake for another 25 minutes, or until a thermometer in the thickest part of the breast reads 165 F.

Spatchcocking Tip

Sometimes on a smaller chicken when you press on the breasts to flatten, you won’t hear a crack. That’s normal because the chicken is quite small and once you remove the bone, it’s already kind of flat.

Tips for Best Results

Here are my top tips for cooking a whole chicken like a pro!

  • Bring chicken to room temperature: Warm up the bird on a counter for about 30 minutes, if you have time. This helps it cook more evenly.
  • Use sharp kitchen shears: Key for cutting through the backbone and ribs of the chicken easily and safely. A sharp knife can get the job done if you don’t have shears, but it might take a little more effort and precision.
  • Cut close to the bone: To minimize waste and leave more meat on the chicken for roasting. I usually save a few bones and backs in a freezer bag and use them to make rich, flavorful chicken broth.
  • Dry your chicken: Moisture prevents the skin from browning and can make it soggy, so patting the bird dry with paper towel ensures crispy skin and juicy meat.
  • Bake without parchment paper: I noticed the spatchcocked chicken and veggies roast better and caramelize more right on a metal sheet. Using parchment paper can cause the food to steam a bit, but if you prefer not to have the food touching aluminum or non-stick surfaces, feel free to use it.
  • Don’t over bake and let chicken rest: Remove the chicken when it reaches 165 F in the thickest part to avoid drying it out. And letting it rest allows the juices to redistribute which keeps the meat juicy and tender.

This healthy dinner is already a one pan meal but it pairs beautifully with fresh salads for a little extra variety. Try a simple butter lettuce salad, my favorite coleslaw recipe, or a refreshing cucumber and tomato salad.

For heartier options, add a side of crusty bread or fluffy Instant Pot white rice to soak up the juices. It’s a flexible dish that works with whatever you have on hand!

Store: Keep all your leftovers in an airtight container and in the fridge for up to 5 days.

Freeze: Pop the chicken into a freezer-safe bag, and it’ll keep for up to 3 months. Just thaw it out when you’re ready to enjoy

So, these oven baked tacos are perfect for lazy taco makers like me. They’re so easy to make and are to die for! Perfect for busy weeknights just like sheet pan steak fajitas, chicken quesadillas and simplified chicken enchiladas!

The ingredient list for this recipe is incredibly simple!

Ground beef, guacamole, pico de gallo, taco seasoning, garlic powder, onion powder, Tex-Mex cheese, diced green chilies, corn tortillas, refried beans, oil.
  • Ground beef: Extra lean ground beef is the way to go because it has less fat and doesn’t produce as much grease.
  • Diced green chilies: I add a 4 ounces can to the ground beef for the tastiest taco meat.
  • Seasonings: Garlic powder, onion powder, and taco seasoning.
  • Refried beans: You can make your own refried beans in Instant Pot or use store-bought, I usually opt for organic refried beans.
  • Shredded cheese: I like cheddar cheese or Tex Mex cheese for tacos.
  • Small tortillas: I used soft corn tortillas to keep them gluten free, but you can also use flour tortillas.
  • Oil: Any oil will work for brushing on the baking sheet.
  • For serving (optional): Guacamole, I love homemade! Pico de gallo, Greek yogurt or sour cream, and limes.

  • Prep: Heat your oven to 425 F and lightly oil a large baking sheet. Set it aside for later.
  • Cook taco meat: Heat a large skillet over medium-high heat, then add the ground beef. Cook for 5 minutes, breaking it into small pieces as you stir. Drain any excess fat. Next, add the garlic powder, onion powder, taco seasoning, and green chilies, and cook for another 3-4 minutes, stirring occasionally. Once done, turn off the heat.
  • Warm tortillas: Lay the tortillas on a large plate, cover them with a damp towel, and microwave for 30-60 seconds until softened.
  • Assemble tacos: Arrange tortillas on your prepared baking sheet. Spread some refried beans on half of each, then add ground beef mixture and cheese. Fold them over and give them a gentle press. Spray or brush with oil and place another baking sheet on top.

Here are my top tips for making these baked beef tacos a favorite among taco lovers.

  • Drain the fat: If using ground beef. This not only makes them healthier, it will help keep tacos crispy and not soggy as they won’t sit in fat during baking.
  • Be sure to press them during baking: Otherwise the folded up top shell will open up. We still ate my test and it was delish, just less pretty.
  • To omit refried beans: If you don’t have any or don’t want to use them, mash up a can or 2 of drained black beans. I always try to buy organic black beans.
  • Don’t skip warming up tortillas: Otherwise they will break during folding, it only takes a minute!

In addition to guacamole, salsa, and yogurt or sour cream, here are some more favorite taco toppings.

  • Shredded lettuce
  • Diced tomatoes

We’ll either enjoy tacos on their own or paired with a tasty side dish.

Our favorite salads for taco night are spinach avocado salad or mixed greens with creamy avocado cilantro dressing. We also like a heartier salsa like mango salsa or pineapple jalapeño salsa for dipping tacos or crispy tortilla chips.

If you’re craving something more substantial, rice is always a winner. You can keep it simple with Instant pot jasmine rice or brown rice, or cilantro lime cauliflower rice for something low carb.

And I’ll make Mexican cauliflower rice, Instant Pot rice and beans, or Tex Mex rice and beans with zucchini for our more festive occasions.

Store: It’s best to serve these immediately, that’s when they are most crispy. You can store leftovers in an airtight container in the fridge for up to 3 days.

Reheat: I think it’s best to reheat them back in the oven at 425 F for 5 minutes. Or on the stove in a non-stick skillet and pan fry 2 minutes per side with a bit of oil, to avoid making them extra greasy.

I think microwave would make them a little bit soggy but it might work. I would set it for 45 seconds.

Freeze: I haven’t tried, not sure about texture. Again, I think fresh is best.

Yes, you can use small flour tortillas. No need to warm them up before folding, they are pliable.

What can I use instead of diced green chilies?

You can substitute chopped jalapeno for diced green chilies. Or saute small minced onion and garlic with beef. Another option is to add more taco seasoning or cayenne pepper or paprika for a kick. Just any spices you like for more flavor.

Can I make them vegetarian?

Sure! Use your favorite meat substitute, crumbled tofu or a can of drained small beans like black beans or white beans for vegetarian baked tacos. Keep in mind, they’re going to be very beany tacos though.

  • Preheat oven to 450 degrees F. In a large 9×13 baking dish, add chicken breasts, grape tomatoes and garlic cloves. Drizzle everything with olive oil and then sprinkle with Italian seasoning, salt and pepper. Stir with tongs to coat evenly.
  • Make a well in the center of baking dish and place a block of feta in it.
  • Bake uncovered for 30 minutes and then broil for another 5 minutes or until golden brown.
  • Remove from the oven, cover with foil and let stand for 5 minutes. Using a large spoon, stir feta cheese and tomatoes gently, pressing on them to create a sauce. Then garnish with basil.
  • Serve warm with your side of choice like pasta or rice or a salad.

Ingredients for Sheet Pan Chicken and Veggies

Chicken breasts, broccoli, potatoes, Italian seasoning, red onion, olive oil, garlic, bell pepper, salt and pepper.

You will need just a mix of whatever veggies you like, chicken breasts, oil, and a few simple spices. We use same seasonings to season both chicken and vegetables. I believe in “quality over quantity” and keep my chicken recipes simple.

  • Chicken breasts: I used 4 medium sized boneless skinless chicken breasts. If you have large to extra large chicken breasts, use 3 pieces.
  • Potatoes: I used yellow potatoes, you can also use red skin potatoes or baby potatoes. You can use russet potatoes if you like their taste once roasted.
  • Bell pepper: Any color sweet bell pepper will work. Use orange, yellow or red bell peppers in any combination you like.
  • Broccoli: Crowns and stems, chopped.
  • Onion and garlic: I like to roast red onion for its extra sweet taste. Grated garlic is used for seasoning chicken and vegetables.
  • Olive oil: I prefer to use extra virgin olive oil as it adds a lot of flavor to this sheet pan meal! You can use avocado oil or grapeseed oil if you like.
  • Italian seasoning: My go-to is my homemade Italian seasoning recipe. I now have a dedicated jar for it in my spice drawer. If you use store-bought, make sure it’s low sodium version.
  • Salt and pepper

How to Make Sheet Pan Chicken Dinner

To make sheet pan chicken and veggies I love to use my large and sturdy with tall walls OXO baking sheet. Here is a quick overview how to do it and full recipe is located in the recipe card below.

Step by step process how to season vegetables and chicken and then roast on a sheet pan.
  • Prep: Chop bell peppers and onion into same size 2 inch pieces, so they don’t overcook too much. And cut potatoes into smaller 1.5 inch bite-size pieces, so they have a chance to cook through.
  • Season the vegetables: In a large bowl, add bell peppers, onion and potatoes. Then drizzle with olive oil and sprinkle with grated garlic, Italian seasoning, salt and pepper. Toss or stir to coat and spread in a single layer on a baking sheet.
  • Season the chicken: In same bowl, add chicken breasts and same seasonings as for veggies. Stir to coat and lay on top of veggies.
  • Roast: Bake chicken and veggies on a sheet pan for 35 minutes in preheated to 425 F oven. Your meal is ready when potatoes are easily pierced with a knife and chicken breasts register at least 165 F when checked with instant read thermometer.

What Are the Best Vegetables to Roast?

For this oven roasted chicken breast and vegetables recipe, any firm vegetables that can withstand cooking for up to 35 minutes without becoming too overcooked work.

Here are a few ideas:

  • Sweet potato
  • Butternut squash
  • Brussels sprouts
  • Cauliflower
  • Green beans
  • Carrots

Tips for Best Results

You can turn many other vegetables and protein into one pan dinners with a bit of guidance and common sense.

Here are my tips how to make your weeknights less stressful:

  • For more crispy roasted veggies: This recipe results in a fair amount of cooked veggies without much crispy edges. If you would like more roasted vegetables final result, divide chicken and vegetables equally between 2 large baking sheets.
  • Using other oils: I recommend to use extra virgin olive oil for this sheet pan chicken recipe. When combined with Italian seasoning, it makes this dish extra flavorful without many other spices. Avocado oil is quite bland but will work as well.
  • Add more spices: If you feel like, add up to 1 teaspoon of smoked paprika, garlic powder, ground cumin, curry powder or chili powder for extra flavor.
  • Using frozen vegetables: You can roast frozen vegetables, especially if your chicken is slightly frozen too. Just increase baking time by 10-15 minutes and play it by ear.
  • Using chicken thighs: If you like dark meat, I recommend to use skin-on bone-in chicken thighs in this recipe. Boneless chicken thighs will dry out quickly before potatoes will be ready. You might have to increase baking time by a few minutes or until thermometer registers 165 F when inserted in the center close to the bone.

Serving Recommendations

This is a one pan meal that is complete with protein, carbohydrates, fiber and healthy fats. You can easily serve it on its own! But if you feel like adding “a little something” on the side, this butter lettuce salad or spring mix salad will make a perfect simple side dish.

You can also top it with a dollop of pesto.

How to Meal Prep One Pan Chicken and Potatoes

Meal prepping saves a lot of time! There are 3 ways I would recommend to meal prep this sheet pan chicken and veggies, and they all depend on your personal preference.

  • Chop. You can chop vegetables and cut chicken, then refrigerate in separate containers for up to 2 days. Store potatoes covered with cold water separately. Combine when ready to cook and follow recipe instructions.
  • Season. Season chicken and vegetables, store in separate airtight containers in refrigerator for up to 2 days. Combine when ready to bake and roast.
  • Cook. Roast chicken and veggies, divide between meal prep containers, cool down and refrigerate for up to 4-5 days. Grab and go for healthy lunch ideas throughout the week. This is my choice because I’m the queen of leftovers!

Can I Freeze Leftovers?

Personally I don’t recommend to freeze this dish. Let me explain why. Vegetables are already “wilted” because they are cooked. Once you place them in a freezer and then thaw, it will make them very soggy. But you can try, if you like.

Is it safe to cook meat and vegetables together?

It is safe to cook chicken and vegetables together as long as you follow USDA guidelines for recommended internal temperature for cooked meats that is safe for consumption.

How do I know when it’s ready?

Your meal is ready when both potatoes are soft when pierced with a fork, and internal meat thermometer inserted in the thickest part of the breast registers 165 F. Both chicken and potatoes need time to cook through.

Should I cover chicken and vegetables during baking?

There is no need to cover chicken and vegetables with aluminum foil or parchment paper when roasting on the sheet pan in the oven. On the contrary, you want them to bake open to get roasted on the outside.

How do I reheat it?

To reheat leftovers, I recommend to use a microwave to prevent chicken breasts from drying out. Or bake at 350 F for 10-15 minutes.

These roasted chicken thighs and potatoes is my mom’s recipe. She didn’t cook often (grandma did) but this was her absolute staple for a healthy dinner. Crispy potatoes, roasted onion and garlic combined with juicy dark meat and crispy chicken skin, it will become your family’s favorite!

I’m obsessed with any chicken and potatoes combo because I am Ukrainian. Like Instant Pot chicken and potatoes and one pan chicken and potatoes are just other variations of this recipe. My kids rave about this chicken dish for days!

I often double the recipe, bake one right away and refrigerate another one to bake the next day. It is called “make ahead”.

Ingredients for Roasted Chicken Thighs and Potatoes

Chicken thighs, potatoes, carrots, onion, bay leaves, garlic, oregano, basil, cumin, rosemary, oil, salt and pepper.
  • Chicken: It’s best to use bone-in chicken thighs with skin on. It will be the juiciest baked chicken and potatoes you ever tried!
  • Potatoes: Best potatoes to roast are yellow potatoes, red potatoes, Yukon Gold potatoes or baby potatoes.
  • Onion, carrots and garlic: There is something about soft sweet carrot and roasted onion. And even maybe burnt slivers of garlic. Use the largest onion ever. There will be a fight for the caramelized roasted onion, trust me.
  • Seasonings: You can use any dried herbs you like or have on hand for extra flavor. My family used only salt, pepper and fresh garlic. My rule of thumb is 1 teaspoon of salt, plus 1 tablespoon of dried herbs, plus 1 teaspoon cumin. You can skip cumin or use ground coriander instead.

How to Make Roasted Chicken Thighs and Potatoes

Here is a quick overview how we make roasted chicken thighs and potatoes using only one dish. Everything is combined and baked in same baking dish!

Step by step process how to make roasted chicken thighs and potatoes.
  • Prep: Preheat oven to 450 degrees F and get a large 9 x 13 baking dish with deep walls.
  • Combine everything: To the dish, add chicken, potatoes, carrots, onion, garlic, and bay leaves. Drizzle with oil and then sprinkle with ground cumin, dried herbs, salt and pepper. Using your hands or large spoon, toss well to coat.
  • Bake: Roast chicken and potatoes uncovered for 40-45 minutes or until potatoes are fork tender, and chicken juices run clear or instant read thermometer inserted in the center close to the bone registers 165 F.

Tips for Best Results

  • Stretch the chicken skin: After seasoning unbaked chicken thighs and potatoes, stretch the skin to cover the meat to prevent it from drying out.
  • Do not use russet potatoes: They do not taste as good when roasted and make the best healthy mashed potatoes.
  • Choose deep dish: You can use any large 9 x 13 inches or even bigger baking dish with deep walls. Oven-proof glass or ceramic baking dish is great. You want to be able to mix ingredients with your hands without chicken and potatoes “flying” around your kitchen.
  • Do not place chicken on top of the potatoes: Arrange potatoes and carrots around the chicken thighs so they cook evenly. If you place chicken on top of the vegetables, they won’t cook at same rate and won’t crisp up.

What Do I Serve It with?

Since this is one pan meal with protein, carbs and even some vegetables, we usually serve it with some light and simple salad. I particularly like to serve it with vinegar centered salads like butter lettuce salad and vinegar based coleslaw. If you prefer more traditional salad, try this simple spring mix salad.

Sliced cucumbers and tomatoes with healthy veggie dip or cottage cheese ranch dip would pair nicely as well.

I don’t recommend to roast other vegetables at same time in the oven as it may create extra steam preventing chicken and potatoes from crisping up. If you have an air fryer, you can make air fryer broccoli or air fryer brussels sprouts as a simple side dish.

Can I Make It Ahead of Time?

You can make ahead this chicken thighs recipe. In fact, I do it all the time. I prep 2 recipes at same time. Then I bake one tonight and refrigerate second one assembled and covered in the fridge for up to 24 hours, then bake tomorrow.

Because you coat potatoes in oil and spices, they will not turn brown.

How to Store and Reheat

Store: Store leftovers in an airtight container for up to 5 days. Roasted potatoes, carrots and onions will lose their crispness over time but it’s normal.

Reheat: You can reheat chicken thighs and potatoes in a non-stick skillet to bring some of the crispness back and without much oil thanks to the coating.

Can I use boneless chicken thighs or chicken breasts for this recipe?

Yes, you can use skinless boneless chicken thighs or chicken breasts in this recipe. Just cut you potatoes and carrots into 1 inch pieces and reduce cook time to 30 minutes.

Can I use sweet potatoes instead of regular potatoes?

Yes but keep in mind that sweet potatoes cook faster than regular potatoes. If you want, add yams to the pan after chicken, carrots and onions have been baking for 15 minutes. Do not forget to stir.

Can I use frozen chicken thighs?

You may be able to use frozen chicken thighs if you cut potatoes and carrots into 3 inch cubes. Baking time should be around 1 hour.

How do I know when chicken is ready?

Your chicken thighs are ready when their juices run clear. Because chicken is dark meat and often retains a bit of pink color, the most accurate way to check if your chicken is ready to eat is to insert an instant read thermometer into the thickest part of chicken closer to the bone. As per USDA guidelines, poultry is ready when cooked to 165 F.

Sweet Potato and Eggs is easy and delicious breakfast baked in one pan. All you need is to season potatoes, crack some eggs and sprinkle with feta and cilantro after. How easy?!

This sweet potato and eggs recipe came out of a sheer desire to make breakfast in our house easy and delicious.

It also works as a healthy dinner, especially if you have busy nights with kids’ activities, like we do!

I remade this recipe again today and I had to put my laptop away and just eat, I couldn’t stop.

Grape tomatoes were popping in my mouth, barely soft with tender skin. Eggs were cooked perfectly, not runny but not thick solid. And sweet potatoes with goat feta cheese, avocado, hot pepper flakes and lime juice were a flavor explosion!

We love potatoes and eggs combo like in healthy breakfast casserole, so I figured this would be a success too. And it sure was!

Ingredients and Notes

It’s got so much flavor using simple ingredients but you can also swap some of the ingredients to make it your own.

  • Sweet potatoes: Can also swap for potatoes of any color.
  • Eggs: You’ll need 6 large eggs.
  • Feta cheese: I like goat milk feta cheese, but you can also use cow’s milk feta if you prefer.
  • Seasonings: Garlic powder, oregano, basil, salt, and pepper. You can also use fresh garlic, but it is an extra step and tool!
  • Grape tomatoes: I just love how easy they are to wash and throw on top. Regular diced tomatoes will work.
  • Garnishes: Green onions, cilantro, hot pepper flakes, avocado (or guacamole), salsa, and lime juice.

How to Make Sweet Potato and Eggs

Here are the simple steps to prep this recipe in 5 minutes! After that it’s all baking time.

Cut sweet potatoes with oil and seasonings in a bowl.

Prep: Preheat your oven to 425 degrees F and line your baking dish with parchment paper and cooking spray.

Cut and season potatoes: Cut the sweet potatoes in half lengthwise. No need to peel!

Then dump them into a deep bowl with oil and spices and toss until evenly coated. Feel free to use your fingertips to rub.

First bake: Place the seasoned sweet potatoes flesh side up in a prepared baking dish and bake for 35-40 minutes or until knife tender.

Cracked eggs in between sweet potatoes with grape tomatoes and crumbled feta on top.

Second bake: Crack the eggs into the spaces between the potatoes. Sprinkle on the tomatoes and feta and bake again for 9-10 minutes or until the egg whites are opaque.

Garnish: Remove from the oven, garnish as desired and enjoy hot!

Tips for Making Egg and Sweet Potato

  • If you’re worried about egg shells, crack one at a time in a small dish, then pour it into the dish.
  • When using a convection oven, the baking time will be reduced by 10 minutes or so.
  • No need to peel the potatoes. The skin has plenty of nutrients, but it also helps to keep the shape of the sweet potatoes. If by chance they’re overcooked, they’ll at least be too soft in their shell!
  • For a runny yolk, you’ll want to keep an eye on it while it’s in the oven. Eggs won’t take too long to cook, so once the egg whites are cooked, take the dish out immediately.

Storing and Reheating

Storing and reheating: Leftovers can be stored in the refrigerator for up to 2 days.

I would say the best way to reheat would be in a microwave as you don’t want to be tossing potatoes and eggs around to make a mush.

Freezing: Baked sweet potato does not freeze well, so I wouldn’t recommend it.

  • Preheat oven to 425 degrees F, line 9 x 13 baking dish with unbleached parchment paper and spray with cooking spray.
  • In a large mixing bowl, add potatoes, oil, garlic powder, oregano, basil, salt and pepper. Toss well until potatoes are coated.
  • Lay potatoes cut side up in previously prepared baking dish and bake for 35-40 minutes (convection oven reduces baking time by 10 mins or so) or until knife tender.
  • Remove from the oven and carefully crack eggs in between the potatoes, top with tomatoes, sprinkle with feta cheese and bake for another 9-10 minutes or until egg whites are white.

Unlike regular fajitas that require standing over a skillet, sheet pan steak fajitas are seasoned and baked to perfection right in the oven!

Sheet pan dinners are quick and simple that don’t feel like a chore. I mean, who doesn’t love a hands-off method?!

While steaks are a bit of a luxury item in our house, I’ll admit that my entire family loves Mexican dishes like carne asada steak and carne asada tacos. However, those are both for days when I have a little more energy in the kitchen. These oven steak fajitas are perfect for busy weeknights!

Ingredients for Sheet Pan Steak Fajitas

All you need is just a handful of ingredients and several pantry staples for this 30ish minute meal.

Steak, bell peppers, onion, taco seasoning, jalapeno, cilantro, garlic powder, avocado, salt, pepper, olive oil, lime, tortillas.
  • Steak: You can use flank steak or skirt steak. I could not find any in my grocery stores, so I used top sirloin steak and fajitas still came out fabulous!
  • Vegetables: A classic combination of yellow, white or red onions and sweet bell peppers.
  • Jalapeño: Feel free to adjust the amount to personal taste. You can leave some seeds in for an extra kick of heat.
  • Olive oil: Or another neutral cooking oil like avocado oil.
  • Lime: Use fresh lime juice, not bottled, for the best flavor.
  • Spices: You’ll need a simple combination of taco seasoning, garlic powder, salt and pepper.
  • Tortillas: You can use small whole wheat or white flour tortillas, or corn tortillas.
  • For serving: Avocado slices or guacamole, cilantro, lime, Greek yogurt or sour cream, and cheese.

Steak Tip

If you want to know more about the differences between flank steak vs. skirt steak. Flank steak is the leaner of the two and works best for cooking to medium. Whereas skirt steak is slightly more tender and more forgiving (without becoming chewy) when cooking to well done.

How to Make Sheet Pan Steak Fajitas

First, preheat the oven to 475 F and line 2 rimmed baking sheets with either parchment paper or silicone baking mats.

Step by step process how to make sheet pan steak fajitas.
  • Prepare the steak and veggies: Look at your steak and see how the lines are running across it. To cut against the grain, you want to slice through the lines rather than parallel with them. Cut bell pepper and onions into thin strips.
  • Season both: Divide meat and vegetables into 2 separate piles on one pan. Drizzle steak with olive oil and lime juice, then add taco seasoning, garlic powder, jalapeno, salt and pepper. Drizzle veggies with oil, then season with taco seasoning, garlic powder, and salt and pepper. Gently toss each pile and divide between 2 sheet pans, combining and spreading.
  • Bake the steak fajitas: Bake for 20 minutes, then broil for a few minutes until golden brown.
  • Season: After removing the steak fajitas from the oven, season steak only with a finishing salt like pink salt, coarse sea salt or flaky sea salt.

Baking Time Tip

If you use a dark colored baking pan, the fajitas may cook faster. Also all ovens vary, some run hotter and some bake slower. You know your oven best, so adjust accordingly.

Tips for Best Results

  • Make sure to slice the steak against the grain: To avoid ending up with tough, chewy steak pieces.
  • For easier steak slicing: You can place it in the freezer for 20-30 minutes before slicing. However, you may then want to increase the cooking time by a couple of minutes.
  • Cooking the steak whole: I prefer pre-slicing it before cooking and still find the results wonderfully tender. However, you could also cook the steak whole, rest for 5 minutes, and slice against the grain for slightly more rare and tender steak. Use a meat thermometer to make sure it’s cooked to 165 F in the middle.
  • To warm the tortillas: You can place them in a stack wrapped in foil in the oven in the last few minutes of baking.

Variations

  • Other vegetables: While peppers and onion are the classic fajita vegetables, you could add sliced portobello mushrooms, broccoli, thinly sliced zucchini, and other veggies that will cook in time. Even cherry tomatoes could work.
  • Switch up the protein: Boneless skinless chicken breasts or chicken thighs, and large shrimp will work in this recipe.
  • Other spices: Feel free to add a little ground cumin or smoked paprika.
  • Sugar: This might sound odd but a pinch of sugar helps balance with the spice and ups the flavor of the steak.

How to Store and Reheat

Store: Store any leftovers in an airtight container in the fridge for up to 3 days.    

Reheat: Reheat steak fajitas in a large skillet, pan-frying until warmed through. This not only heats the steak but also crisps it up a little.  

Make ahead: You can slice the vegetables and refrigerate them in an airtight container for 2-3 days. Don’t add seasonings yet, as they’ll soften and release water and texture will be wrong.

At the same time, you can slice the steak and store it with all the seasonings for up to 3 days.

When ready to cook, season the veggies and follow the recipe.

FAQs

What is the best steak for sheet pan fajitas?

Skirt, flank, or rump steak is the best for fajitas. I also like the most affordable top sirloin steak. I’ve found that as long as you slice it against the grain, the meat will come out tender.

How do I know when steak fajitas are ready?

To check for doneness, just taste a piece of steak. It’s as simple as that.

Why are my sheet pan steak fajitas chewy?

The most likely reason for this is overcooking the steak. Since every oven is slightly different, you could check on it at around 16 minutes and then keep checking every few minutes until they reach your desired level. Remember there’s a final broil at the end too!

Can I use frozen vegetables?

I don’t think it’s a good idea because frozen vegetables contain a lot of moisture. Both steak and veggies will come out more steamed rather than roasted.

65 Healthy Chicken Recipes: Chicken Salad

One of my most popular healthy chicken recipes. This easy and low fat Healthy Chicken Salad is a must-have recipe for quick lunches, dinner or picnics. Even though it is low on calories, it is big on taste.

Ingredients

  • 1 lb 3 cups cooked chicken, cubed
  • 3/4 cup 3 large celery stalks, diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup parsley or dill finely chopped (optional)
  • 1 cup pecans, almonds or cashews
  • 1/2 cup plain yogurt 2+% fat
  • 1/4 cup mayo I used avocado oil mayo
  • 2 tsp Dijon mustard
  • 1 tsp any vinegar except balsamic
  • 1/2 tsp salt
  • Ground black pepper to taste

Instructions

  • In a small skillet, toast pecans on low-medium heat until darker brown and fragrant. Make sure to stir often. Then, transfer to a cutting board, cool and chop coarsely.
  • In a medium bowl, add toasted pecans, chicken, celery, onion, parsley, yogurt, mayo, mustard, vinegar, salt and pepper. Stir gently to mix. Adjust the amount of salt to taste.
  • Chicken salad tastes best cold, so refrigerate for at least 2 hours.
  • Serve with quinoa, brown rice or greens or make a chicken salad sandwich with whole wheat bread.

Notes

  • Store: Refrigerate in an airtight container for up to 5 days. I have not tried freezing this salad, but don’t think the fresh veggies and herbs would hold up well.
  • How to cook chicken for salad: Use baked chicken breast. Or if you have an Instant Pot, try making Instant Pot frozen chicken, Instant Pot whole chicken  or Instant Pot chicken breast.
  • Onions: You can substitute white or green onion for red onion. 
  • Sweet addition: Try adding sliced grapes or chopped apple for a bit of sweetness. 
  • Use any mayo: Olive oil mayo or vegenaise work well. I tend to use avocado oil mayo because it is healthier. 
  • Do not use 0% yogurt: You will definitely want to use plain regular or Greek yogurt with a fat content of at least 2%. Yogurt with less fat will cause the chicken salad to taste flat and chalky (and who wants that?!).
