Tuscan White Bean Soup is a hearty, creamy one pot meal ready in 30 minutes, packed with veggies, beans, and spices for a soul-warming depth of flavor.

In our house, it wouldn’t be a soup season without mushroom bean soup and vegetarian pasta fagioli as well!

Tuscan white bean soup in a bowl with bread and spoon.

This Tuscan white bean soup is to-die-for! It’s completely vegan, easy to make, and serves about 6 people. But don’t be surprised if there isn’t a drop left by the end of the night, this one got rave reviews in our house!

I have been having fun updating and creating soup and stew recipes this season, like my healthy broccoli cheddar soup, healthy chicken pot pie soup and the viral marry me chicken soup.

There’s just nothing better when the weather cools down!

Why You’ll Love This Recipe

  • One of the best soups I ever made: While vegan, the white bean Tuscan soup is thick, hearty, and full of flavor.
  • Ridiculously easy: Made in one pot with simple, everyday ingredients.
  • Higher in protein: White beans pack this soup with 13 grams of protein, making it more filling than other vegan soups.
  • Customizable: Keep it classic or add more vegetables, ground meat, or pasta.

Ingredients for Tuscan White Bean Soup

It doesn’t require a long list of ingredients. Just simple staples and the perfect seasonings.

Cannellini beans, carrots, onion, celery, garlic, kale, olive oil, italian seasoning, red pepper flakes, salt, pepper, white wine, parsley.
  • White beans: I used low sodium cannellini beans. They’re super creamy with a smooth texture, which makes them perfect for soups. But if you’ve got white navy beans on hand, those work too.
  • Mirepoix: A mix of onion, garlic, carrots, and celery that creates the classic flavor base for many soups and stews.
  • Olive oil: To saute the veggies and add flavor.
  • White wine: It might not be a kitchen staple for everyone, but for this recipe, it helps deglaze the pan, lift all those flavorful bits, and really deepens flavor.
  • Vegetable broth: Feel free to use store-bought low sodium broth or homemade vegetable broth.
  • Spices: Italian seasoning is added to the mirepoix for a burst of flavor, then salt, pepper, red pepper flakes, and bay leaves go in to simmer.
  • Greens: I like kale because it has a heartier texture, but baby spinach is good too.
  • Fresh herbs: Some chopped parsley or basil for a finishing touch.

How to Make Tuscan White Bean Soup

This soup is perfect for beginners, easy on the budget, and great for meal prep. Here’s how to make it.

Step by step process how to make tuscan white bean soup.
  1. Saute the veggies: Saute the onion and garlic in a large pot or Dutch oven with oil for 3 minutes. Toss in the celery and carrots, and saute for another 7-10 minutes. Sprinkle in the Italian seasoning and give it a few stirs. Pour in the white wine and let it simmer a bit.
  2. Combine and simmer: Stir in the beans, broth, salt, pepper, red pepper flakes, and bay leaves. Bring to a boil covered, then lower the heat and let it simmer for 15 minutes.
  3. Blend: Puree 2 cups of soup, make sure to include veggies and beans, either in a blender or with an immersion blender.
  4. Finish the soup: Transfer back to the pot, add kale, parsley, and stir. Give it a try and adjust any seasonings to taste.

Tips for Best Results

Here are my top tips to make this into the most flavorful bowl for a healthy dinner!

  • Don’t skip the wine: It adds a bit of acid and so much flavor.
  • Use only white beans: Their meaty texture really makes the creamy base. Kidney beans will have an off color.
  • Use lots of olive oil: It brings a smooth, slightly fruity flavor that enhances the overall taste. Plus, it’s healthy!
  • Adjust salt: Maybe add salt at the end, especially if you are using not low sodium canned beans.
Looking down on a bowl of soup with bread.

Variations

  • Add Parmesan rind: In the beginning with the broth. Your soup won’t be vegetarian anymore unless you use vegetarian Parmesan cheese.
  • Add ground meat: Saute some crumbled sausage, ground turkey, or ground chicken before sauteing the vegetables and transfer to a plate. Then add back to the soup with kale and parsley.
  • Add cooked chicken: If you’re not feeling like ground meat or have some leftover chicken, just mix it in at the end.
  • Other greens: Kale and spinach are my defaults, but Swiss chard would also be delicious. Just remove the rib and chop it finely.
  • Saute more veggies: Bulk it up with leeks, bell peppers, mushrooms, zucchini, butternut squash, or green beans.

Serving Ideas

This Tuscan white bean and kale soup is hearty on its own, but it pairs really well with a good crusty bread or a toasted slice of cottage cheese bread.

For something a bit different, serve it with a side of Instant Pot jasmine rice, or a grilled cheese on the side never hurts!

How to Store and Reheat

Store: Once cooled, this soup will store in an airtight container in the refrigerator for 5 days.

Freeze: Transfer to a freezer safe container, leaving room for expansion, and freeze for up to 3 months. Let is defrost in the fridge overnight.

Reheat: Heat up the amount that you want by letting it simmer on low with the lid on.

FAQs

Can I use dried beans?

Yes, but you’ll need to soak the dried beans overnight and you will have to cook the soup for longer and add more broth. I haven’t tested how much, so play it by ear, but it’s totally doable!

What can I use instead of wine?

You can substitute chicken broth. The flavor won’t be the same, but it works. In this case, I would add 2-3 tablespoons of butter at the end. It won’t be vegan anymore, unless you use vegan butter. You can also add a 14 ounces can of regular or fire roasted diced tomatoes.

Can I make it in slow cooker?

Yes. Saute veggies in a skillet first, then slow cook for 2 hours on High or 4 hours on Low.

This is the best Baked Salmon Recipe made with simple seasoning of butter, garlic and lemon, then baked until flaky and juicy. Ready in 25 minutes, it’s a perfect weeknight dinner!

Baked salmon garnished with dill and lemon on a baking sheet.

This baked salmon is the most simple and juicy salmon recipe! I do have a similar recipe for baked salmon in foil, but this time I added the butter sauce before baking and cut large fillet into slices.

It’s a hands-off dinner that’s perfect for busy weeknights. If you prefer something with a sticky-sweet glaze, you’ve got to try my baked teriyaki salmon!

Why You’ll Love This Recipe

  • Simple ingredients: Made with 7 ingredients, including salt and pepper.
  • Healthy: Packed with protein and omega-3s.
  • Endless possibilities: Match it with your favorite sides or play around with different herbs.
  • Foolproof: You’ll have perfectly baked salmon on your plate in under 30 minutes!

Ingredients for Baked Salmon Recipe

You’ll need just 5 ingredients to make a garlicky lemon butter sauce plus a sprinkle of fresh dill.

Salmon, butter, garlic, lemon, dill, salt and pepper.
  • Salmon: About 2 pounds of boneless salmon fillet cut into 6 or 8 pieces. You can use farmed or wild salmon, with or without skin.
  • Salted butter: You’ll need melted butter for the sauce.
  • Lemon juice: Adds a zesty touch. If you don’t have a lemon lying around you can swap in white wine vinegar, it’s tangy and bright, and very good!
  • Garlic: I recommend fresh garlic for the most flavor. The recipe calls for 3 cloves, but feel free to add more if you’d like.
  • Fresh dill: I love using fresh dill with salmon. Fresh parsley is also a top runner.
  • Salt and black pepper: To taste.

How to Bake Salmon

Here’s an overview of how to bake salmon in the oven with very little hands-on time.

Step by step process how to bake salmon in the oven.
  • Season the salmon: Preheat your oven to 375 F and line a large baking sheet with parchment paper. Place the salmon pieces on the sheet pan, skin down and leaving a little space between each. Sprinkle generously with salt and pepper.
  • Make the butter sauce: In a small bowl, mix together melted butter, lemon juice, and garlic.
  • Coat the salmon: Brush the butter mixture onto each piece of salmon, covering the top and sides. Spoon the remaining garlic evenly over each piece.
  • Bake it: Bake for 13-15 minutes or until the thickest part hits 125-130 F and flakes easily with a fork.
  • Finish and serve: Finish by brushing each piece with the butter from the pan. Top with fresh dill and serve right away.

How Long to Bake Salmon?

I find 375 degrees F is the ideal oven temperature to bake the salmon. I tested baking salmon at 400 degrees F but it came out dry, and 350 degrees F is too low.

FDA recommends to cook salmon until an instant read thermometer reads 145 F. I found wild salmon was too dry then. I recommend to bake until 125 F or 130 F, or until it easily flakes with a fork. Let salmon rest for 2-3 minutes and it will get there.

Also keep in mind wild salmon is more dry, so it needs less cook time than farmed salmon.

Tips for Best Results

Here are some helpful tips to make this dinner recipe even easier and more delicious!

  • Bring salmon to room temperature: If you have time. You would only need about 15 minutes, and bringing it to room temperature helps it cook a little more evenly.
  • Keep the skin on: The skin helps lock in moisture, keeping the fish tender as it bakes. It also contains additional vitamins and minerals and becomes crispy, making it a treat some people enjoy eating.
  • Don’t over bake it: How long to cook salmon in the oven depends on the type of salmon, thickness, and your oven. Keep an eye on it and check for doneness around 13-15 minutes to ensure it stays tender and flaky without drying out.
  • Farmed vs. salmon need different cook times: Wild salmon is more dry, so it cooks faster than farmed salmon.
Baked salmon flaked with a fork and served with buckwheat stir fry.

Serving Ideas

I usually serve oven baked salmon as a weeknight dinner with green veggies like air fryer asparagus or air fryer broccoli. On the weekends, I go for an elegant brussels sprouts salad.

For easy, tasty sides, try these:

How to Store and Reheat

Store: Keep fish in an airtight container in the fridge and eat within 3 days. Cold salmon is great in salads!

Freeze: Freeze in an airtight container for up to 3 months. Just remember to thaw in the fridge overnight.

Reheat: I reheat my salmon in a skillet with a splash of water and covered, or in the oven. The microwave dries it out a bit but when short on time, I do that.

FAQs

Is it better to bake salmon at 375 F or 400 F?

It’s better to bake salmon at 375 because the heat is more moderate. I tried baking it at 400 F and fish dried out.

How do I know when salmon is ready?

Salmon is ready when it easily flakes apart with a fork and is opaque. FDA recommends to cook salmon to an internal temperature of 145 F, I bake until it’s between 125 F-130 F, and let it rest for a couple minutes.

Should I cover salmon when baking?

You don’t need to cover salmon when baking, but it depends on your preference. Leaving it uncovered allows the top to get a bit crispy. Keep in mind salmon cooks faster when covered in foil.

Is there a difference in cook times between wild and farmed salmon?

Yes, there is a difference in cook times. Wild salmon tends to cook faster because it’s more leaner and dry. Farmed salmon is more fatty, so takes a little longer to cook.

Course Dinner
Cuisine North American

Prep Time 10 minutes
Cook Time 15 minutes

Ingredients

  • 2 pounds salmon fillet cut into 6 (5 oz each) or 8 (4 oz each) pieces
  • 3 tablespoons salted butter melted
  • 1 1/2 tablespoons lemon juice or white wine vinegar (very good)
  • 3 large garlic cloves minced
  • 2 tablespoons dill or parsley finely chopped
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375 degrees F and line large baking sheet with parchment paper. Place salmon pieces onto it, leaving some space in between each. Sprinkle with salt and pepper generously.
  • In a small bowl, combine melted butter, lemon juice and garlic; stir well.
  • Brush onto each salmon piece, making sure to coat the top and sides. Spoon garlic on top, dividing evenly.
  • Bake for 13-15 minutes or until thermometer inserted in the thickest part registers 125-130 F and salmon flakes easily with a fork. More likely you will need to cook wild salmon for less time than farmed. Do not over bake as salmon dries out quickly, especially wild salmon.
  • Remove from the oven and brush each slice with released butter around it. Top each salmon piece with fresh dill and serve immediately while warm.

Notes

  • Store: Refrigerate in an airtight container and enjoy within 3 days. Cold salmon tastes amazing in healthy salads.
  • Reheat: Reheat in a non-stick skillet on low-medium heat, with a splash of water, covered for a few minutes. You can microwave if short on time, but that generally dries out salmon.
  • Freeze: Freeze for up to 3 months in an airtight container. Thaw in the fridge overnight

Chicken and Rice is an easy one pot meal with juicy chicken thighs, fluffy rice, veggies, and simple spices. Ready in 45 minutes with tasty leftovers!

Chicken and rice garnished with parsley in a pot with wooden spoon.

After sharing my Instant Pot chicken and rice and crockpot chicken and rice, it’s time to share this easy chicken and rice recipe, a one pot stovetop version that’s ready in under an hour.

I’ve been making it for years just the way my family always cooked it. I love its simplicity, the flavorful spices, and the fact that with a few tips, it’s a failproof recipe!

Why You’ll Love This Recipe

  • One pot meal: Easy cleanup makes it a weeknight winner.
  • Fluffy rice: Cooking the rice in Dutch oven with the right amount of broth makes it super fluffy with each grain separate. No mush here!
  • Healthy dinner: It’s got protein, veggies, and grains all in one.
  • Simple recipe: Everything about this meal is simple but the taste! Simple ingredients, simple steps but delicious results. Guaranteed family approval every time!

Ingredients for Chicken and Rice

All you need is chicken, rice, and carrots, plus a few everyday spices.

Chicken thighs, carrot matchsticks, onion, garlic, olive oil, salt, pepper, chicken broth, parsley, cumin, smoked paprika, thyme, oregano, jasmine rice.
  • Chicken thighs: I use 2 pounds of boneless skinless chicken thighs for this chicken recipe because they’re juicier than chicken breasts and stay tender.
  • Aromatics: Fresh garlic and yellow or white onion.
  • Carrots: I recommend matchsticks carrots because they hold their shape better and cut down on prep time, but you can also shred 2 large carrots.
  • Olive oil: Extra virgin olive oil to saute the aromatics, add healthy fats and a lot of flavor. Don’t use other oil please!
  • Rice: You’ll need uncooked rice for this recipe. My favorite is jasmine rice however basmati, long grain white rice or even long grain brown rice will work.
  • Broth: Low sodium chicken broth cooks the rice while boosting the flavor.
  • Seasoning: Dried thyme, dried oregano, cumin, smoked paprika, salt and pepper.
  • Garnish: Fresh parsley adds a pop of color and freshness.

How to Make Chicken and Rice

Here’s a quick overview of how to make this weeknight special.

Step by step process how to make chicken and rice in one pot.
  • Sear the chicken: Heat a Dutch oven or large pot on high, add olive oil, and cook half the chicken for 6 minutes, stirring once. Remove and set aside, then repeat with remaining chicken.
  • Saute aromatics: With olive oil still in the pot, add onion, garlic, and carrots. Saute for 5 minutes. Stir in thyme, oregano, cumin and smoked paprika, stirring often for 30 seconds.
  • Combine and cook: Add chicken, rice, chicken broth, salt and pepper. Stir to combine, cover, bring to a boil, then reduce heat to low. Let it simmer for 12 minutes without opening the lid.
  • Rest and serve: Turn off the heat and let it sit for 5 minutes. Stir in parsley and serve hot.

Tips for Best Results

This one pot chicken and rice is foolproof with these easy tips.

  • Make it with chicken thighs: They’re less dry than breasts, and since rice is dry, chicken thighs are my personal preference for this dish.
  • Use long grain rice: So you’re rice doesn’t come out mushy. I like to use jasmine rice, but you can also use basmati rice or long grain rice.
  • Cook in a cast iron pot: It helps retain the heat and cooks the chicken and rice evenly.
  • Don’t peek in: During cooking and resting. Opening the lid lets steam escape which will mess up the cook time and the results. With rice, you don’t peek!
  • Let it stand: So rice can finish cooking and plump up. Again, don’t open the lid.
Chicken and rice served on a plate with a fork.

Variations

  • Chicken breasts: You can use boneless skinless chicken breast if you’re OK with more dry meat. Cook time will stay the same.
  • Brown rice: If using brown rice, it will need more cook time. Check on it after 30 minutes, then cook longer and add more broth, if necessary. I recommend to use chicken thighs then so the meat doesn’t dry out.
  • Add extra veggies: Saute 1 1/2 cups of zucchini, mushrooms or bell peppers, and add them in with the remaining ingredients.
  • Different seasoning: Feel free to add any of your favorite spices like lemon pepper, pot roast seasoning, Italian seasoning, onion powder, Cajun, or taco seasoning.
  • Quinoa: A fantastic rice substitute. This recipe would be very similar to one pot chicken quinoa and beef quinoa stew then.

Serving Ideas

We usually serve this one as a hot, comforting meal on its own. Sometimes, I switch the garnish from parsley to green onion or dill.

If you’re craving a small side, here are some ideas:

How to Store and Reheat

Store: You can pop leftovers in the refrigerator for up to 3 days.

Reheat: Add your desired amount to a medium pot with a splash of water or broth. Break it up and stir gently over low heat until warmed through.

Freeze: Transfer cooled leftovers to an airtight container, then you can freeze for up to 3 months. Thaw in the fridge overnight, then reheat.

FAQs

What if my rice is crunchy?

If your rice is crunchy that’s alright, the cook time varies depending on the rice you use, your pot, and your stove. Add another half cup of broth and simmer on low, covered. Check every 3 minute until the rice is tender.

Why is my rice soft but there is still liquid?

Most likely not enough time for the liquid to fully absorb or too much liquid was added. Let it simmer a little longer uncovered to allow the excess liquid to evaporate.

How do I know when my chicken and rice is ready?

The chicken is done when it reaches an internal temperature of 165 F on an instant meat thermometer, and the rice is ready when it’s tender and the liquid has been absorbed.

If you love sun-dried tomatoes, you’ll also love this healthy Tuscan chicken pasta!

Marry me chicken pasta served on a plate with fork and spoon.

A simple, restaurant-quality marry me chicken pasta that’ll have you keeping sun-dried tomatoes stocked in your kitchen from now on!

I usually serve marry me chicken with cozy staples like mashed potatoes, rice, or pasta. To make things easier, I turned it into a full 30 minute meal by mixing the chicken, sauce, and pasta in one dish.

Why You’ll Love This Recipe

  • Simplicity and ease: A quick, no stress dinner that’s perfect for busy nights.
  • Gluten free option: Easily adaptable to be gluten free without sacrificing any of the flavor.
  • A show-stealing sauce: An easy-to-make, tomato cream sauce that won’t break a sweat.
  • Enjoy all year long: Winter or summer, this pasta dish shines all year!

Ingredients for Marry Me Chicken Pasta

It uses a perfect mix of protein, veggies, and spice staples.

Chicken breasts, flour, butter, chicken broth, heavy cream, sun dried tomatoes, red pepper flakes, garlic, parmesan cheese, italian seasoning, basil, olive oil, onion, spinach, salt and pepper.
  • Short pasta: Choose a farfalle, fusilli or penne pasta with plenty of crevices to catch the sauce. You can go gluten free or whole wheat, if you prefer.
  • Chicken: Cut into bite-sized pieces. I like boneless skinless chicken breasts for this recipe, but you can use chicken thighs.
  • Aromatics: Fresh garlic and onion add a delicious savory base.
  • Flour: Helps give the chicken a nice, crispy crust. You can use all-purpose, whole wheat, or gluten-free flour.
  • Chicken broth: Use low sodium chicken broth, chicken stock, or vegetable broth for the sauce.
  • Sun-dried tomatoes: I used oil packed sun-dried tomatoes this time. If you use dried, you’ll need to soak them in hot water for 5 minutes, then squeeze and slice.
  • Heavy cream: Makes the sauce rich and creamy. You can swap in half and half for a lighter option and still get a creamy texture.
  • Parmesan cheese: Grab a block of Parmesan and grate it yourself. Store-bought grated cheese just doesn’t have that rich, mature flavor.
  • Baby spinach: A subtle touch that brings color, earthy flavor, and a sneaky way to add some greens.
  • Spices: Italian seasoning, salt, pepper, and red pepper flakes give the sauce a perfectly seasoned kick.
  • Butter: For frying.
  • Fresh herbs: Finely chopped parsley or basil for garnish.

How to Make Marry Me Chicken Pasta

This recipe comes together fast, and clean-up’s a breeze too!

Step by step process how to make marry me chicken pasta.
  • Cook the pasta: Cook pasta in a large pot of salted water until al dente, then drain and set aside.
  • Saute aromatics and chicken: While the pasta cooks, heat another large pot or Dutch oven over medium-high and melt some butter. Sauté the onion and garlic for about 3 minutes, then add the chicken and cook for another 5 minutes, stirring occasionally until browned.
  • Make the sauce: Add flour and stir well. Pour in the broth and cook for about 3 minutes, stirring often. Add sun-dried tomatoes, Italian seasoning, salt, pepper, red pepper flakes, heavy cream, and Parmesan. Bring to a boil, then cook on low for 10 minutes, stirring now and then.
  • Combine it all: Add the spinach and pasta, gently mix, then garnish with parsley or basil. Enjoy!

Tips for Best Results

Follow these simple tips, and your marry me chicken pasta recipe will be a heart-stealer every time!

  • Don’t over cook the pasta: It should be al dente, it will continue to cook a bit when mixed with the sauce.
  • Grate your own cheese: It melts smoother into the sauce and adds more flavor. Pre-grated Parmesan from a shaker or resealable bag is convenient, but doesn’t taste as fresh as the real deal.
  • If not a fan of sun-dried tomatoes: Swap them out for chopped fresh tomatoes or 1/2 cup of canned diced tomatoes.
  • Adjust consistency of the sauce: You can add more cream or broth for a thinner sauce, or let it simmer longer to thicken it up.

Serving Ideas

Marry me chicken pasta is not only delicious but also packs 37 grams of protein, so it’s super satisfying on its own.

If you’re looking for a few sides to go with it, here are some simple options:

How to Store and Reheat

Store: Transfer your leftovers to an airtight container and store in the refrigerator for up to 5 days.

I avoid freezing pasta because I’m not a fan of the texture after it thaws, but if you don’t mind it, it can be frozen for up to 3 months.

Reheat: Add a little extra cream or broth and heat on the stovetop until it’s fully warmed through.

FAQs

Why is it called “marry me chicken pasta”?

The name “marry me chicken pasta” plays on the idea that the dish is so amazing, thanks to the rich creamy sauce and tender chicken, that you might want to marry the chef after tasting it.

Can I use chicken thighs?

Yes. Boneless skinless chicken thighs work perfectly, and you don’t need to make any other changes to the recipe.

How can I add more protein?

You can boost the protein by using high protein pasta like chickpea, lentil, or edamame pasta. Also, I would pulse 1 cup of cottage cheese and a bit of milk and stir it into the cooked pasta dish at the end.

  • Bring large pot with water to a boil. Add a pinch of salt and pasta, then cook for 8-10 minutes or until pasta is al dente. Drain and set aside.
  • Preheat another large pot on medium-high heat and add butter. Add onion and garlic, saute for 3 minutes, stirring occasionally. Add chicken and saute for another 5 minutes, stirring occasionally.
  • Add flour and stir to coat. Add chicken broth and cook until incorporated and smooth, about 3 minutes, stirring often.
  • Add sun dried tomatoes, Italian seasoning, salt, pepper, red pepper flakes, heavy cream and Parmesan cheese. Stir, bring to a boil, reduce heat to low and simmer for 10 minutes, stirring occasionally.
  • Add spinach and pasta, then mix gently.
  • Garnish with parsley or basil and serve hot.

Notes

  • Store: Refrigerate in an airtight container for up to 5 days.

Healthy White Chicken Chili recipe is a 30 minute meal with the option of making it 3 different ways. Whether made on the stovetop, in the Instant Pot or a slow cooker, this healthy chicken chili is easy and extremely popular for a reason! Serve with tortilla chips or almond flour cornbread, avocado slices, and your favorite cheese!

A true crowd pleaser just like this buffalo chicken chili, chili with ground chicken and this ground turkey chili recipe.

Healthy white chicken chili served with avocado slices, cilantro and jalapenos.

Soup and stew, no matter where you’re from, will always be comfort food, especially when there’s a chill in the air. I did not grow up in Ukraine eating any kind of chili, especially white chicken chili.

We warmed up every single day with bowls of borscht and healthy chicken noodle soup.

So, chili, in general, is something I’ve learned to love over the years and healthy white chicken chili is a welcome change to the traditional beef chili that I was first introduced to.

Both are hearty, wholesome, and delicious healthy chili recipes, but the creamy, slightly salty, flavorful white chicken chili is a nice way to switch it up!

Why You’ll Love This Recipe

  • Lighter meal: This version of a very popular dish is healthier as it doesn’t require any cream cheese or heavy cream. Instead, I use plain Greek yogurt which is high in protein and still gives it that creamy velvety texture.
  • Delicious: Made with tender beans, juicy kernels of corn, shredded chicken, green chilies, and a tasty broth infused with tons of delicious flavor and texture. The slightly mashed cooked beans also give it the body and heartiness. It doesn’t skimp on flavor and rivals any gourmet restaurant soup recipe!
  • Family friendly recipe: It’s not too spicy, so the kids will have no problem polishing off their bowls.
  • Quick to make: The entire recipe comes together in as little as 30 minutes, depending on your cooking method (white chicken chili in crockpot will slow cook longer).
  • Easy to make 3 different ways: In the crockpot, on the stovetop or in the Instant Pot. You decide!
  • Perfect for meal prep: Leftovers can be kept in the fridge or frozen, so make a big batch and meal prep lunches for the week!

Ingredients for Healthy White Chicken Chili

To make this healthy white chicken chili, you will need just a few simple ingredients.

Chicken breasts, white beans, corn, onion, lime, garlic, chicken broth, diced green chiles, cumin, oregano, chili powder, cayenne, salt.
  • Chicken: Boneless skinless chicken breasts come with a lot of meat and are easy to shred once cooked and start falling apart.
  • Beans and corn: When cooked, great Northern beans or cannellini beans, are buttery and just melt in your mouth. They add to the creaminess and the juicy corn gives it added texture with a bit of sweetness from the juice. Use frozen corn, quickly cook corn on the cob in Instant Pot or use leftover crock pot corn on the cob.
  • Aromatics: Onion and garlic are needed to impart flavor into the entire dish.
  • Diced green chilies: A can of this will add not only a bit of heat but flavor too!
  • Chicken broth: Look for low sodium broth, if you can. If you’ve got some homemade chicken broth or Instant Pot chicken broth, by all means, use that!
  • Herbs and spices: Ground cumin, dried oregano, chili powder, cayenne pepper, salt, and pepper to taste. You can adjust any of these to your preferences. Fresh cilantro is perfect to add some vibrant herbaceous notes or skip all together.
  • Yogurt: Plain Greek yogurt adds the thick and rich body that the base of the white bean chicken chili needs without the heaviness of processed cream cheese and heavy cream. Be sure to use yogurt with at least 2% fat.
  • Fresh lime juice: The acid from the lime juice is exactly what this chili needs to cut through the creaminess.
  • Oil: I use avocado oil because of its heat tolerance and health benefits. Olive oil will work just as well.
  • For serving: Tortilla chips, avocado, yogurt, fresh limes.

How to Make White Chicken Chili on the Stove

Here is a quick overview how to make healthy white chicken chili on the stove. Crockpot and Instant Pot versions are down below. Also there is detailed recipe card with all 3 cooking options at the end of this post.

Step by step process how to make healthy white chicken chili on the stove.
  1. Saute veggies with spices: Saute onion and garlic for a few minutes. Then add spices for 30 seconds to allow them to release their flavors. You want to stir at this point constantly to prevent burning.
  2. Mash the beans: Mash about 1 cup of white beans with a fork and a bit of water, if necessary. Beans starch will thicken the chili as it cooks. I find mashing beans before rather than after cooking much easier. Especially, because there is no blender to wash.
  3. Cook the chili: Then add chicken, broth, green chilies, corn and simmer for 20 minutes. The tight lid on a heavy bottom pot or even better option Dutch oven cooks chili fast.
  4. Shred the chicken: You can do it inside the pot with two forks. I like to use meat claws (also great for chicken salad), so I remove chicken and place it on the cutting board and then shred.
Pot with white chicken chili, yogurt and soup ladle in it.
  • Combine with seasonings: Return chicken to the pot along with lime juice, cilantro, and yogurt. Make sure the stove is off, so the yogurt doesn’t curdle. Your white chicken chili recipe is ready!

Make It in the Crock Pot

The difference between stovetop and crockpot white bean chicken chili is that you have to saute onion, garlic, and spices in the skillet and then transfer them to the slow cooker. And add only 1 cup broth.

  1. Cook veggies in a skillet: Saute onion, garlic, and spices in the skillet. Transfer to a large slow cooker.
  2. Combine in the slow cooker: Mash 1 cup of beans and add to the slow cooker along with other whole beans, only 1 cup of broth, chicken, and corn.
  3. Cook: Cover and cook on Low heat for 6 hours or on High heat for 3 hours.
  4. Shred meat and season: Shred chicken and return it to the crockpot along with cilantro, lime juice, and yogurt.

Recipe Tip

If you like to use the Keep Warm setting for your chili, I recommend adding the yogurt to individual bowls once served, to prevent it from scorching.

Make It in the Instant Pot

If you know me, you know I am obsessed with Instant Pot recipes. It just makes healthy dinner a reality and so much easier.

I do have an official Instant Pot white chicken chili recipe. However, here is a quick run down:

  1. No need to saute: You don’t have to saute the veggies or spices. Food cooked under pressure comes out more flavorful.
  2. Add and cook: Just throw everything in the Instant Pot in the order listed in the recipe (please note only 1 cup of broth). Pressure Cook on High pressure for 20 minutes.
  3. Quick release, shred, and season: Quick Release the pressure. Shredding the chicken can be done right in the pot because it’s stainless steel. Add cilantro, lime juice, and yogurt.

Recipe Tip

Just like with a slow cooker version, if you like to keep your white chicken chili warm while you wait to serve it, hold off on adding the yogurt until it’s served. That way it won’t curdle in the pot.

Tips for Best Results

  • Chicken broth amount varies: For each different cooking method, pay attention to the amount of liquid used. The Instant Pot and slow cooker only require 1 cup whereas the stovetop requires 3 cups of chicken broth. This is because cooking on the stovetop will allow more of the liquid to evaporate.
  • Make it more creamy: The base is already thick and creamy, and the beans are nice and buttery, but if you like your soup even more blended, pulse it with an immersion blender for a few seconds until desired consistency is reached.
  • Make it thicker: If you find using the Greek yogurt doesn’t give you thick enough results you’re after, you can add a cornstarch slurry to thicken it up a bit.
  • Don’t use non-fat yogurt: 0% or 1% yogurt lacks flavor and body. It tastes quite chalky on its own. This creamy chili recipe relies on the fat in yogurt because all other ingredients do not contain any of it.

Variations

  • Cream cheese: If cream cheese is what you have on hand and you don’t mind using it, make classic white chicken chili with cream cheese instead of Greek yogurt or in addition to it.
  • Using chicken thighs: Instead of chicken breasts, use the same weight of boneless skinless chicken thighs. No changes to the recipe are necessary.
  • Leftover cooked chicken: Use leftover store-bought rotisserie chicken or from another recipe. I use Instant Pot shredded chicken breast, Instant Pot chicken breast or even Instant Pot frozen chicken frequently. Add it in the beginning just like when you would add raw chicken. Super flavorful and even easier!
  • Using fresh corn on the cob: Scrape off the kernels if you’ve got an abundance of corn from the market or garden.
  • No heat: If you want to keep peppers in your soup but none of the kick, swap for sauteed diced bell peppers. Green for savory and red for a sweeter flavor.
  • Other spices: Ground coriander is a nice addition to increasing the flavor profile.

Toppings Ideas

When it comes to chili toppings, it is all about personal taste, heat preference and availability. This healthy white chicken chili is mouthwatering and delicious all on its own but that doesn’t mean you can’t load it up with your favorite toppings:

  • Cilantro: Never too much but I know some people find it soapy. You can also omit it!
  • Yogurt: Or sour cream which is creamier.
  • Tortilla chips. Crunchy, crispy, and slightly salty are great for dipping!
  • Avocado: If you have a ripe one, dice it or slice it and serve on top.
  • Heat: If you can handle the heat, fresh sliced jalapeno with seeds is amazing addition.
  • Cheese: Top with shredded cheese for additional cheesiness. Cheddar, Monterrey Jack, and even Parmesan would work. Or crumbled Cotija cheese is a classic!

What to Serve Healthy White Chicken Chili with?

How to Store and Reheat

Store: This white chicken chili recipe serves 6 people. It was enough for our family of 4 for dinner and then Alex and I finished it for lunch, so you may not have any leftovers for long. But if you do, refrigerate them in an airtight container for up to 5 days.

Freeze: If you’re serving only 1 or 2 people, make the entire batch of chili and freeze any leftovers. Because there is not much dairy, chili will thaw just fine. Freeze in an airtight container for up to 3 months. You can also make this recipe as a freezer meal, following my freezer meals instructions.

Reheat: Thaw in the fridge overnight and then reheat on low heat on the stove, in the slow cooker, or steam in the Instant Pot for 5 minutes. The nice thing about a pressure cooker is that you can thaw chili from frozen.

FAQs

What can I substitute for green chilies?

Canned diced green chilies are usually not spicy. However, there are mild and spicy versions. My stores carry very mild green chilies and that is what I am using. You can skip them altogether and use more cumin and maybe ground coriander would be nice too. Or add sauteed bell peppers.

Can I use dried beans in this healthy white chicken chili?

Some of our readers have had success using dry beans in the slow cooker by adding an extra 1.5 cup of water at the start to account for the dried beans, which by the time it was ready (4 hours), the chili was nice and thick. Alternatively, you could soak them overnight and cook next day. Here is a full tutorial how to cook dried beans on the stove.

Can I add rotel or diced tomatoes?

The awesome thing about this chili is that it’s completely flexible and customizable to your liking. Adding Rotel or diced tomatoes will increase the acidity and tomato flavor, and change the color of the chili, but it will be great!

Can I make this white chili without chicken?

Yes! Omit the chicken and bam. Also, use vegetable broth instead of chicken broth and if you’d like, you can increase the number of beans used.

Why is white chili white?

Unlike traditional chili, there are no tomato products to turn it red! Instead, we’re using white beans, white yogurt, and in some cases, white cream cheese. So, naturally, this would result in a white stew!

Baked Cottage Cheese Egg Bites are light, fluffy, and contain 6 grams of protein. Make a batch on the weekend and enjoy a quick healthy breakfast all week.

Another breakfast timesaver we love are these Instant Pot egg bites, egg white bites and cottage cheese egg muffins.

Cottage cheese egg bites on a countertop and fresh basil leaves and a bowl with cottage cheese.

Quick and easy cottage cheese egg bites are like Starbucks sous vide egg bites but I kept the recipe simple with just 5 ingredients. Pair with some fruit for breakfast, or a small salad for lunch, they’re perfect for adding extra protein to your day.

And I kind of like the air bubble texture of these egg bites with cottage cheese, they’re more like Yorkshire puddings or mini dutch baby pancakes. I do have a tip below on how to steam them, so they come out solid and perfectly fluffy.

Why You’ll Love This Recipe

  • High in protein: Each egg bite is packed with 6 grams of protein. Have 3 and you already consumed 18 grams of protein in the morning!
  • Cheaper than Starbucks: They’re way less expensive than $6 for 2 egg bites at the famous coffee shop. So you can skip the drive thru!
  • Versatile: Egg bites have lots of flexibility, you can add almost anything! I’ve named a few favorites below.
  • Perfect for meal prep: If you’re heading into a crazy busy week, go ahead and make a double batch. They taste just as good when reheated.
  • Enjoy anytime: A make ahead breakfast, a protein-rich snack, or an easy weekend brunch menu item. They’re a lifesaver for me and my busy boys!

Ingredients for Cottage Cheese Egg Bites

You’ll need a small handful of simple ingredients, including salt and pepper, to make this recipe.

Eggs, fresh basil, cottage cheese, salt and pepper.
  • Eggs: Use 8 large whole eggs. See tips below for using egg whites.
  • Cottage cheese: Makes them come out light, fluffy, and moist. I used 2% fat, but you can use any fat% cottage cheese.
  • Basil: A touch of fresh basil in each egg bite adds the most flavor.
  • Seasoning: Salt and pepper to taste.

How to Make Egg Bites with Cottage Cheese

Here’s a quick summary of how to make these egg bites with minimal prep time and ready in 30 minutes! There is a full recipe card below.

Step by step process how to make cottage cheese egg bites in a blender and then bake in a muffin pan.

Start by preheating your oven to 350 F and line a muffin tin with parchment paper liners.

  1. Blend eggs and cottage cheese: Add eggs, cottage cheese, salt and pepper to a blender or food processor and blend until smooth.
  2. Add herbs and veggies: Add basil and give your blender a few shakes, so it’s evenly distributed through the mixture. This is also where you add any other add-ins.
  3. Bake: Pour egg mixture into the 12 openings of the muffin pan and bake for 25-28 minutes. Egg bites are ready when a toothpick inserted in the center comes out clean, tops are slightly golden and egg bites have puffed up.
  4. Serve: No need to let them sit, remove them from the oven and enjoy hot!

Tips for Best Results

Here are the top tips I’ve learned after making them for years.

  • Use muffin liners: Even if it’s a non-stick muffin pan because sometimes non-stick coating wears off and eggs are very sticky. A silicone muffin pan or silicone mold works well without muffin liners.
  • To create silky custard texture: While the oven is preheating and during baking, place a pan with about half an inch of water in it on the bottom shelf. Then bake egg bites on the shelf right above it. This will steam egg bites with perfect custard-like texture like Starbucks.
  • Be sure center egg bites are done: Insert toothpick in the center of the center egg bites because edge ones are usually done faster.
  • If you would like to use egg whites: Use 2 cups egg whites and the cooking time should be the same.
One egg bite cut in half and showing texture and more egg bites with cottage cheese around it.

Variations of Egg Bites

My cottage cheese egg bites recipe is the perfect starting point, enjoy as is or get creative and add whatever you like!

  • Fresh herbs: Instead of basil use fresh parsley or dill.
  • Shredded cheese: Add up to 1 cup of grated sharp cheddar cheese, gruyere cheese, smoked Gouda cheese, Monterey jack cheese, Swiss cheese, or 1/2 cup Parmesan cheese.
  • Soft cheese: I love crumbled goat cheese or feta cheese.
  • Jarred goodies: Try roasted peppers, sun-dried tomatoes, or olives.
  • Meats: Add more protein with smoked salmon, crispy baked bacon, ham, sausage, cubed cooked chicken.
  • Greens: Chopped kale or spinach are delicious.
  • Vegetables: Make your favorite veggie combo or use up what you have on hand like sauteed mushrooms, bell pepper, onion, green onion, or fresh tomatoes.

FAQs

How healthy are cottage cheese egg bites?

Cottage cheese egg bites are low-carb, low-calorie, gluten-free, and packed with protein and nutrients. Here’s an overview of the health benefits of cottage cheese and eggs.

What can I use instead of cottage cheese?

Cottage cheese is a pretty unique ingredient, I don’t recommend to skip it. You can use 1 cup shredded cheese instead, cream cheese, or use lactose-free cottage cheese if you have lactose intolerance.

How can I make egg bites more custardy?

Steaming egg bites in the oven will create a silky, custardy texture. Add 1/4 inch water to a pan and place it on the bottom rack of your oven while it pre-heats, then place the muffin tin on the rack above it. This will steam the egg bites while they bake.

How are these egg bites different from Starbucks egg bites?

These egg bites are copycat Starbucks egg bites but I’ve kept the recipe simple without any added fillers so they are healthier and less expensive.

Learn how to make the juiciest Air Fryer Chicken Breast recipe in 25 minutes. It is easy, tender and bursting with flavor!

And for last minute dinner, here is how to cook frozen chicken breast in air fryer.

Close up of sliced air fryer chicken breast on a plate.

Time for juicy air fryer chicken breast because we love chicken breast recipes around here! And we do not settle on dry and flavorless chicken!

I’ve already perfected recipes for grilled chicken breast, baked chicken breast, Instant Pot chicken breast and crock pot chicken breast. Now it’s time to perfect it in my latest gadget, the air fryer!

Why You Will Love This Recipe

  • It’s quick and easy: You can have healthy dinner on the table in about 25 minutes without preheating and dealing with a giant oven.
  • You don’t have to brine chicken breasts in salt water!
  • Delicious, failproof results: Cooking chicken breast in air fryer results in juicy, tender chicken breast with a light, flavorful crust and tender, moist middle. Every single time!
  • The oil amount is minimal: Just enough to help the seasonings adhere and lock in the juices.

Ingredients for Air Fryer Chicken Breast

One of the best things about this air fryer recipe is that it is so simple and made up of entirely clean ingredients and pantry staples. You only need 6 basic ingredients!

Chicken breasts, oregano, paprika, onion powder, garlic powder, salt, pepper and oil.
  • Boneless skinless chicken breasts: I use 8 – 9 ounces and around 2-inches thickness breasts. If your chicken breasts are larger or smaller, you may need to adjust the cook time. Please see below.
  • Oil of choice: I use avocado oil or olive oil.
  • Seasonings: A simple combination of onion powder, garlic powder, dried oregano, and smoked paprika. And salt and pepper.

Recipe Tip

Want a different spice blend? You can swap out the seasonings I’ve suggested with Italian seasoning, cajun spice, all purpose spice or taco seasoning. For heat, add a little cayenne pepper or chili powder to the dry rub.

How to Cook Chicken Breast in Air Fryer

Here is a quick overview how to make air fryer chicken breasts. There is full recipe card below.

  • Preheat the air fryer and prep chicken: Preheat it to 380 degrees F for 5 minutes. Add chicken breasts to a bowl and drizzle with oil. Then rub using your hands or toss with tongs to coat.
  • Rub chicken with seasonings: Add the spice blend, salt and pepper, and then rub chicken breasts to make sure all sides of the chicken are evenly coated.
  • Air fry chicken breast: Spray the basket of air fryer with cooking spray, place chicken breasts in air fryer in a single layer and cook chicken for 16 minutes. No need to flip chicken breasts or shake the basket.
  • Check the temperature: Open and insert meat thermometer into the thickest part of the chicken breasts to make sure it has reached at least 150 degrees F.

How Long to Cook Chicken Breast in Air Fryer?

Air frying time depends on the size of your chicken breasts. For average-sized chicken breast that’s around 2-inches thick, I recommend between 16-18 minutes, or until a meat thermometer inserted into the chicken breast reaches 150 degrees F.

As per food safety website, to be safe to eat, chicken must reach an internal temperature of 165 degrees F. However, there’s no need to cook chicken breasts in air fryer until that point. Cook until it’s 150 degrees F and let it rest covered. The residual heat will continue to increase the internal temperature while the chicken rests.

This way, you get to avoid dry, overcooked chicken. It is my secret to juicy and not dry air fryer chicken breasts!

Here is a handy timetable for quick reference:

SizeWeightCook Time
Small Chicken Breasts5 to 7 ounces14 minutes
Medium Chicken Breasts8 to 9 ounces16 minutes
Large Chicken Breasts10 ounces or more18 minutes

Tips for Best Results

  • No need to brine: Dry rub and optimal cooking temperature and method, will take care of juicy chicken breasts.
  • Size matters: I recommend to pick the same size chicken breasts for even cooking when shopping. Also know the weight of each piece to select correct cooking time.
  • Cook in a single layer: The hot air needs to circulate the chicken to get the job done. Overlapping or stacking chicken breasts in air fryer is not recommended.
  • There’s no need to shake the basket: While flipping chicken can help to yield crispier results, this dry rub chicken breast isn’t intended to be super crispy. So leaving it alone will help avoid dry chicken.
  • Allow it to rest: Once cooked, transfer the air fried chicken breast to a large foil covered platter and allow it to rest for 5 minutes to allow the juices to settle and redistribute.

Serving Ideas

Use this air fryer chicken breast recipe for weekly meal prep. I recommend slicing it against the grain. I love it for lunch with simple spring mix salad!

Or turn it into one of easy healthy dinner ideas for family serving with:

Variations

Once you have the basic method down, then you can experiment with different spices, marinades, and more.

  • Sauces: Try it with Thai chili sauce or healthy BBQ sauce.
  • Fresh garlic: If you have a little extra time, feel free to use fresh grated or minced garlic over the chicken breasts like I do in air fryer lamb chops.
  • Add vegetables: If you have enough space in the basket, you can add some veggies directly in with the chicken breasts to cook simultaneously. You could include zucchini, brussel sprouts, red peppers, broccoli and asparagus.
  • For even juicier results: You can marinate the chicken breasts using one of these 5 chicken marinades. When marinated, place the chicken breasts straight into the air fryer basket and cook. There’ll be a little more “cleanup” afterward of the basket but otherwise it couldn’t be more simple.

How to Store and Reheat

Store: Refrigerate leftovers in an airtight container for up to 1 week. Make sure to move it to the refrigerator within 2 hours for food safety and keep it whole for the juiciest results.

Freeze: Cool completely before transferring the chicken breasts to a freezer-safe container and freeze for up to 3 months. I recommend slicing or shredding the chicken breasts before freezing. That way, it’ll thaw faster and can be added to meals immediately.

You can thaw them overnight in the refrigerator before eating or reheating.

Reheat: Here is how to reheat chicken breast in air fryer.

Or reheat air fryer chicken breast in a lidded pot with a splash of water or broth to steam them until warm. This will keep the chicken tender and moist compared to trying to reheat them in the oven.

FAQs

What type of air fryer can I use?

There is a basket style air fryer, toaster oven air fryer and a lid attachment for an Instant Pot. They all work great and choice will depend on personal preference.

I use a large 5.8 quart Cosori air fryer. I cook for 4 people. I say the biggest concern I hear is that air fryer is too small. The attachment lid or small basket would fit maximum 2 chicken breasts in air fryer and you would have to air fry chicken in batches. You can always pop it back in for a minute to reheat the first batch.

Also when air frying food, it needs some space in between to ensure roasted results we all crave from the air fryer.

Do I have to brine the chicken breasts?

No, there is no need to use the brine when you air fry chicken breast. I can guarantee you will have juicy results and save a lot of time with this recipe!

Do you have to flip chicken breasts in air fryer?

No, there is no need to flip chicken breasts in air fryer. Thanks to the design of air fryer, hot air circulates on top and on the bottom of food, cooking it evenly.

What if chicken breast came out undercooked?

After resting the chicken and checking with the instant read thermometer, if you see temperature is below 150 degrees F, cook the chicken for extra 2 minutes. It sure is a delicate balance and figuring out the cooking time based on size, your air fryer and personal preferences. It is a matter of practice.

Can I make it ahead?

Yes. After rubbing the chicken breasts with spices, you can allow them to sit covered in the refrigerator overnight for up to 12 hours before cooking.

This Healthy Tuscan Chicken Pasta recipe is creamy one pot meal packed with sun-dried tomatoes, Parmesan cheese and spinach! Plus, this healthy chicken pasta recipe can be made gluten-free and is ready in 30ish minutes!

It’s just one option on my weekly rotation along with marry me chicken pasta, chicken pasta primavera and creamy chicken spinach pasta.

Healthy Tuscan chicken pasta in a pot with serving spoon.

Would you believe me if I said you could make a restaurant-quality healthy Tuscan chicken pasta recipe at home using one pot and in 30ish minutes?! Because that’s what I’m sharing with you today!

Unfortunately, while the Tuscan pasta at Olive Garden and White Spot might taste delicious, they don’t exactly fit a definition of a healthy dinner! Luckily, after spending some time in my kitchen, this pasta dish was born and it came out wonderfully creamy without the extra calories.

By cooking it all in one pot, it’s a no-fuss dinner, the sauce soaks up all the flavor from the chicken and herbs, and the chicken becomes wonderfully tender and juicy.

Why You’ll Love This Recipe

  • Lighter: We use whole milk and just enough super flavorful Parmesan cheese for an injection of flavor without making this dish heavy. The result is a midweek meal that the entire family will go for seconds!
  • Made in one pot: Chicken, vegetables, pasta and sauce cook in same pot for less dishes to clean.
  • Quick to make: Ready in 30ish minutes for a quick, low-effort weeknight dinner.
  • Perfect year round: With a combination of spinach, bell pepper and sun-dried tomatoes, you can enjoy this healthy chicken pasta recipe year-round with delicious results!

Ingredients for Healthy Tuscan Chicken Pasta

Chicken breast, penne pasta, sun dried tomatoes, bell pepper, chicken broth, spinach, parmesan cheese, garlic, milk and cornstarch.
  • Chicken: I like to use boneless skinless chicken breasts but thighs will work as well.
  • Pasta: Use any short pasta that can hold the sauce like penne, fusilli or bow ties. Use gluten-free option, if preferred, and adjust the cooking time accordingly. Whole wheat or whole foods pasta is more nutritious than white pasta but truly you can use any.
  • Spinach: I always have fresh baby in my fridge. Frozen spinach can be used but thaw it first, then drain to remove excess water.
  • Sun-dried tomatoes: If using packed in oil, make sure to drain well. For dried tomatoes, place them in a small bowl, cover with boiling water and let sit for 10 minutes. Drain and slice.
  • Bell pepper: Any color sweet bell pepper.
  • Milk: I recommend using whole milk for the creamiest results, but 2% milk will also work. I don’t recommend skimmed or 1% milk as the sauce will taste flat.
  • Broth: Use low sodium vegetable broth, chicken broth or Instant Pot chicken broth.
  • Cornstarch: Is needed to thicken the sauce. Arrowroot powder or tapioca is OK as well.
  • Garlic: Adjust the amount to personal preference. You can use 1-2 teaspoons of garlic powder, if you don’t have fresh one.
  • Parmesan cheese: Or another sharp cheese like mature white cheddar or Pecorino Romano. Buy a hunk of Parmesan and grate it yourself. Store-bought grated cheese is not mature and thus not flavorful. Also avoid the green and red shaker please!
  • Oil: Any neutral cooking oil like olive oil or avocado oil works.
  • Spices: I used a combination of Italian seasoning, salt, and pepper. Instead of Italian seasoning, you can use the individual dried herbs like basil, oregano, rosemary, thyme, and marjoram. Or even just 2-3 of them.

How to Make Healthy Tuscan Chicken Pasta

I like to use my 6 quart Lodge Dutch oven for one pot meals. But you can also use large heavy bottom stainless steel pot with a tight fitting lid.

Step by step process how to make tuscan chicken pasta.
  • Sear the chicken breasts: First, preheat your pot on medium heat with a little oil. Then add chicken breasts, sprinkle with a bit of salt and pepper and sear for 3-4 minutes per side. They don’t have to be cooked through.
  • Cook the pasta: Add the pasta, broth, bell pepper, Italian seasoning, remaining salt and pepper and stir. Bring to a boil, reduce to a simmer, cover and cook for 10 minutes.
  • Remove the chicken: Place cooked chicken breasts on a cutting board. You will roughly chop them into pieces while pasta is resting.
  • Prepare the creamy sauce: Mix milk and cornstarch and pour it over pasta. Stir, bringing the mixture to a boil, and then simmer for a minute or so until sauce has thickened.
  • Let it rest: Add sun-dried tomatoes, Parmesan cheese, spinach and garlic. Stir gently, cover and let it all sit to develop flavors while you are slicing the chicken.
  • Finish the dish: Add back cooked chicken. Stir and serve right away!

Pasta Cooking Time Tip

Keep in mind that the type of pasta you use will impact the cooking time. For example, gluten-free pasta will take less time than regular wheat flour. You’re aiming for pasta that’s al dente, so it’s not too mushy.

Tuscan chicken pasta with sun-dried tomatoes and spinach in a pot with wooden spoon.

Tips for Best Results

  • If using gluten free pasta: Cook by a few minutes less as it cooks faster than wheat pasta.
  • Avoid the pasta burning: Make sure to stir it every few minutes, so it doesn’t stick to the bottom of the pan.
  • Allow flavors to develop: I love to let all soups and stews, casseroles and pasta dishes to sit for a few minutes before serving. It gives flavors a chance to “calm down and marry each other”.
  • Using chicken thighs: Use boneless skinless chicken thighs and no other recipe changes are necessary.
  • If your sauce isn’t thickening: Close the lid and let pasta dish sit for extra 2-3 minutes. It will thicken with starches in pasta.

Variations

  • Heavy cream: For creamier Tuscan chicken pasta, you could swap out 1/4 cup of the milk for heavy cream.
  • Cream cheese: Alternatively, instead of heavy cream, add a little cream cheese to the sauce for additional creaminess.
  • Other vegetables: You can add these or substitute the spinach for asparagus, zucchini, or broccolini. Mushrooms would also work well in this recipe.
  • Leftover cooked chicken: Skip searing the breasts, and add 2-3 cups of cubed or shredded chicken at the end. You can leftover chicken like rotisserie chicken or slow cooked chicken.
  • Another protein: This creamy Tuscan pasta works well with shrimp or salmon too! Adjust the cooking process accordingly, seafood needs a sear for 3-4 minutes.
  • Olives: I recommend 1/3 cup of pitted and sliced black or Kalamata olives.
  • Legumes: You can boost this dish with additional fiber and protein with the addition of chickpeas, butter beans, or white beans. Legumes also work well in turning this recipe vegetarian (use vegetable broth too).

Serving Recommendations

Thanks to the hearty addition of chicken breast, you can enjoy this healthy chicken pasta recipe alone or with a simple side. I recommend garlic bread, focaccia, no yeast dinner rolls, a leafy green salad or spinach salad.

You can also serve it alongside some crusty bread like Greek yogurt bread or cottage cheese bread with a simple olive oil bread dip.

How to Store and Reheat

Store: This pasta dish tastes best fresh, while the spinach isn’t too wilted and it’s most saucy before the pasta absorbs it. I recommend eating as much as possible immediately.

Store leftovers in an airtight container in the fridge for up to a day. Don’t freeze!

Reheat: Add an extra splash of milk and reheat on the stovetop until warmed through.

FAQs

Can I use dairy-free milk?

Yes, you can use the dairy-free milk of your choice like almond milk, oat milk, or even Silk non-dairy half & half, etc. Just note that different milk options will change how creamy the sauce is.

Could I bake this pasta dish?

I haven’t tried, so I can’t guarantee results. Though, it may be possible. I would recommend par-cooking the chicken and pasta first before transferring all of the ingredients to a large baking dish and baking until bubbly and fully cooked.

Can I use other veggies instead of spinach?

Yes, you can replace the spinach with kale, broccolini, asparagus or zucchini.

With similar seasonings, it results in perfectly cooked chicken breasts in a crock pot and all you do is dump and go!

Many of you already love my Instant Pot chicken breast which I also often turn into shredded chicken. And this is just one more way to cook it.

Serve it with steamed rice, make it into a shredded chicken for tacos, or add it to a big salad. As for leftovers, use them in crock pot chicken spaghetti or pasta with chicken and spinach the next day!

Ingredients for Slow Cooker Chicken Breast

This is such an an easy slow cooker recipe with only 6 basic seasonings, chicken and 2 other simple ingredients! Feel free to jazz it up with one of these chicken marinades for variety.

Chicken breasts, chicken broth, oil, paprika, dried basil, salt, pepper, garlic powder, onion powder.
  • Chicken breasts: I used 4 boneless skinless chicken breasts and they fit it in my crock pot with minimal overlapping, which is important so they cook evenly.
  • Chicken broth: I prefer homemade chicken broth or store-bought low sodium chicken broth, adjust salt as necessary for the brand you use. You could use water but chicken stock will be have more flavor.
  • Olive oil: Chicken breasts have no fat, which means they can easily dry out. Adding just a small amount of oil or butter, makes them more flavorful and moist. It will also make the broth more rich.
  • Seasonings: Simple pantry spices of garlic powder, onion powder, basil, paprika plus salt and black pepper.

How to Make Chicken Breasts in Crock Pot

Cooking Tip

When you think of slow cooker recipes, you think of starting it before going to work, 4-8 hours of slow cooking, and coming home to ready dinner. It doesn’t work so with chicken breasts though. I am asking you not to overcook it!

Step by step how to make chicken breasts in slow cooker.
  1. Season the chicken: In a small bowl, whisk garlic powder, onion powder, dried basil, paprika, salt, pepper. Then sprinkle chicken breasts on both sides. Even easier, lay raw chicken on large plate and sprinkle with half the spices, flip and sprinkle with the rest.
  2. Add it to crockpot: To the bottom of the slow cooker, add broth, olive oil and lay chicken in a single layer on top. You don’t want them overlapping much to make sure they cook evenly and get that nice “roasted” look.
  3. Cover and cook: Cook on Low for 3-4 hours or on High for 2 hours. The most sure way to know your chicken is ready is to insert an instant read thermometer in the middle, and if it reads at least 160 degrees F, your chicken breasts are ready.
  4. Rest then serve: Then you do want to rest your chicken to let the juices redistribute and reach desired 165 F. So, cover with foil, let rest for 5-10 minutes and chicken will keep cooking with residual heat while becoming juicy. Magic!

Tips for Best Results

  • Quality chicken: It doesn’t need to be expensive or even organic, but it’s important to use the brand you tried and liked. Quality can vary from package to package, so stick to what you like.
  • Don’t overcook it: This is super important to prevent dry chicken breast! The best way is to invest in a meat thermometer, check your meat for the magic number of 160 degrees F and remove it from the slow cooker right away. It will reach 165 F during resting while staying moist.
  • Crock pot size: You don’t want too small of a slow cooker or too large! Too small and your breasts will overlap and cause uneven cooking, too large of a crockpot and they run the risk of cooking too quickly. Ensure your crockpot is at least half full.
  • Similar sized chicken breasts: This will help them cook evenly and at the same time.
  • Don’t open the lid: It’s a golden rule when slow cooking anything! Steam will escape and your chicken will require longer cooking time, which could lead to dry results.

How Long to Cook Chicken Breast in Slow Cooker?

Do not leave your chicken breasts in slow cooker for an entire day. The exact time will depend on the size of your chicken breasts, their type and your slow cooker make and model.

Here is a cooking time chart for reference:

Type of chicken breastsCook time on LowCook time on High
Boneless chicken breasts3-4 hours2 hours
Bone-in chicken breasts3.5-4.5 hours2.5 hours
Chicken tenders2.5-3 hours1.5 hours

Can You Cook Frozen Chicken Breasts in Crock Pot?

While this does seem to be a debatable topic, the USDA Food Safety Guidelines for Slow Cookers recommends to always thaw raw meat or poultry before putting it in your slow cooker.

The long slow temp at which a slow cooker heats up puts your frozen meat in danger of growing bacteria if left at a certain temperature for a long period.

If you only have frozen chicken, try this method for frozen chicken breast in Instant Pot!

Or here is what I like to do. Quite often, I just top cooked chicken with my favorite local store-bought Yeshi sauce and it’s the easiest dinner ever! I am obsessed with those nutritional yeast umami dressings, you can buy it anywhere, even different brand.

Recipe Tip

If you plan to use your chicken in another recipe, you may just want to stick with salt and pepper plus garlic powder.
