I hear ya! Glad to hear you loved this casserole! I am like you but recently I re-tested my chicken enchiladas recipe and I found it wasn’t that bad in terms of time. Nothing beats chop and dump casserole ever though haha.

I never make “traditional” enchiladas anymore, because it’s too much work for me in this phase of life, haha. This is my new go to recipe!! 🙂
