Hi Pops.:) Glad your wife enjoyed the cookies! Almond extract would add almond taste. I would add 1/2 teaspoon, it’s strong. But honestly up to 1 teaspoon won’t hurt. Vanilla extract I would add 1 teaspoon. Anything up to 1 teaspoon will be fine. Have fun experimenting!

The almond flour shortbread cookies was easy to make and a hit with my wife. I am wondering if almond extract enhances the taste of just adds to the aroma? Hi Carla. This recipe might work with tart shells, I think so. Just let them cool completely! Regular sugar won’t affect anything. Good luck!

You have monk fruit extract in parentheses next to erythritol implying it’s the same thing , and I just didn’t want people to go out and substitute one for the other thinking it is. All these ingredients are very expensive and the results can be very different using different sweeteners. I do think using a blend of 2-3 different sweeteners ends up making the product taste better. I have read and also experienced it myself that different sweeteners affect different taste buds in different areas on your tongue so they give you different taste results. That’s why blending several together give you a better affect.🙂

Although t only used half the amount of sweeteners (a mix of monk fruit, Splenda and erythritol). The dough was way too sweet. I will add maybe a table spoon of each next time.
