So I’m confused total cook time including rest is 32 min max. So what are you talking about check Temps at 45 and at 60 min????

I’ve used this recipe multiple times for Christmas dinner and my husband always raves over the lamb when he’s normally not a huge fan of it! Using the fat droppings for roasted potatoes was also a wonderful tip! Thank you for this recipe 🙂

Lamb has to rest for 15 minutes, so it will be sitting only for 20 minutes while vegetables are cooking. I remember it was fine when I tested it this way. You can always pre-roast the veggies before roasting the lamb, then mix veggies with drippings and you will have to roast them just for 15 minutes while lamb rests. A bit more work but gives you desired results.

Technically you can but result will be very-very different. It will be very well done meat with a lot of fat and juices drained from it. It does not appeal to me but you can try. I would sear it and cook on low for 10 hours.
