This was delicious. I used gluten free, almond flour based tortillas shells, lactose free cottage cheese, spinach, fresh salsa and seasonings.

I think Greek yogurt might work. The worry with it is that it curdles during baking but when mixed with eggs it does much better. I wouldn’t use more cheese as there is already cheese in the recipe. I mean you can, it will be just extra cheesy. Have fun!

Thanks for prepping this recipe for us! I made it this morning and it was a hit. Now I’m trying a second one with gluten-free tortillas. They are smaller, so I cut them in half to line the sides and put one in the center for the base. We’ll see how it turns out! We did peppers, onions, garlic, spinach, and cheese.

This turns out pretty tasty when I make it. I do wish the tortilla edges didn’t get so brown. My 20-something daughter is a very inexperienced cook and the “burnt edges” turn her off.
