Finally, someone else who uses beef shank! I also use beef broth (no water), but no tomato paste or sauce. Just wanna let that beet flavor shine.

Thank you so much for sharing this recipe! I want to bring it to my school’s soup cook off. Would it be okay to cook it the night before, then in the morning put it in a crockpot and keep it on “low” all day?

I love this recipe! Finally an authentic Borscht that is not overly complicated. I did brown two beef shanks in my Dutch pot before pouring in 6 cups water and 4 cups beef broth. Wasn’t exactly sure what to do there, water, broth or both, but this turned out with great flavor!
