I loved this soup! I made one variation: I omitted the sun-dried tomatoes and tomato paste, replacing them with a 6-oz jar of sun-dried tomato pesto sauce. You get the sun-dried flavor without the texture. This is a different type of soup than those I usually cook – Thank you for the recipe!

My name is Hannah and I live in Greater London, UK. I am writing to tell you how much I enjoyed making and consuming this lovely soup.

I am 75 years old and must be very careful what I eat. The added cream was my concern. However, I felt inclined to try it and wow, did I enjoy it!!

However, I tweaked your recipe slightly by reducing the amount of liquid, I also added a stick of celery, finely chopped and increased the amount of spinach. For the pasta I used wholemeal spaghetti broken into tiny bits – it works.

I shall be making this soup again and again and again.
